Granola is a cereal made with oats, nuts and sweetner which can be mixed with milk and had for breakfast.The other day when I had a thought of trying laddo with the same recipe and finally put my idea to action and these ladoos came out so good.Do try it ad enjoy!

I love making granola at home for the main reason being variations are endless and when its homemade it can be customised according to our liking.Even kids love it a lot, I usually make it in oven as its easy and for all those who had asked for a stove top version of granola, will post  it soon.

I think these can fit in even for a light breakfast on the go.Id muffin can be had for breakfast why not ladoos ?! 🙂

Oats granola ladoo recipe

Oats granola ladoo recipe a healthy snack to enjoy

Ingredients

Mixed nuts:

  • 1/4 cup badam
  • 1/4 cup pistachios
  • 1 tbsp figs
  • 2 tbsp cashews
  • 1 tbsp dried apricots

Instructions

  • First heat 1 tbsp butter let it melt add the nuts and fry for 2 mins, remove and set aside.
  • In the same pan add oats and fry for 5 mins in low flame without major color change, remove and set aside.Heat 2 tsp butter along with cane sugar and water.Mix well, it will start to boil.
  • Let it boil rigorously at this stage(will take 3mins) switch off.Add fried nuts,oats,honey,vanilla essence, ghee and salt.
  • Mix well until well combined.When its still warm add 2 tsp ghee mix well and shape them as ladoos.

Notes

  • I have used butter as I wanted to recreated the exact granola recipe then shape them as ladoos.But you can replace butter with ghee too.I added little ghee at the end for greasing and easy shaping.
  • You can use any mixed nuts and dry fruits of your choice.This is what I had in hand so used them up.
  • While the syrup is bubbling do not burn it, cook in low flame.Just  bubble it up just for 2-3 mins not more than that.
  • You can skip vanilla essence and add cardamom powder instead.
  • Salt is added to lift the sweetness added.Make sure your cane sugar is clean and free from impurities.
  • Do not roast oats for a long time, keep in low flame and roast, take care not to burn it,You can use rolled oats too but roasting time may differ.
  • When its still warm, start shaping else it would not hold easily.

Look for evenly colored skin. If it is with green patches and yellow patches un evenly distributed, you may be consuming artificially ripen mangoes/ fruits. It should have a natural gradient colour skin.

Try to avoid buying mangoes off season. Also always buy from quality, well established sellers.

Bread kunafa has a buttery crunchy exterior and a creamy and cheesy interior which has a light floral sweet taste.

Ingredients
  • Bread Slices - 4 (you need 2 cups of ground breadcrumbs)
  • Butter - ¼ cup melted (60 ml)
  • Fresh Cream / Thick Cream - ¼ cup
  • Mozzarella Cheese - ½ cup grated
  • Sugar - ½ cup
  • Water - ¼ cup
  • Rose Extract few drops
  • Pistachios - ¼ cup powdered
Instructions
  1. Preheat oven to 180 degree C.
  2. Take bread in a blender and powder till fine.
  3. Take it in a bowl, add melted butter and mix well.
  4. Spoon half of the mixture into the baking pan. Press flat and firm.
  5. Now spread cream and cheese.
  6. Top with remaining breadcrumbs and press lightly.
  7. Now bake this for 25 to 30 mins.
  8. Take sugar and water in a sauce pan. Bring it to a boil. Boil till syrupy. Add rose extract and mix well.
  9. Now pour this over the bread kunafa and leave to soak for 10 mins.
  10. Serve hot.

Pictorial:

1)Take bread slices in a blender

2)Grind till fine breadcrumbs

3)Add in melted butter

4)Mix well

5)Spoon half of the mix into the pan

6)Press evenly

7)Spread cheese on top

8)Spread evenly

9)Top with mozzarella cheese

10)Top with breadcrumbs

11)Flatten the top

12)Bake till golden

13)Now make sugar syrup. Take sugar in a sauce pan

14)Add water

15)Bring it to a boil. Boil for 2 to 3 mins.

16)Add in few drops of rose extract

17)Syrup is done

18)Now bread kunafa is baked

19)Unmould

20)Pour syrup on top

21)Leave to soak for 10 mins

22)Decorate with powdered pistachios

23)Slice

23)Enjoy

24)YUM.

Homemade ricotta cheese is super easy to make than you might think. It is creamy and really delicious.

  • Milk - 1 liter
  • Lemon Juice - 2 tblsp
  • Salt - ½ tsp
Instructions
  1. Take milk in a sauce pan. Bring it to a simmer. Dont let it boil.
  2. Add in salt and mix well.
  3. Now add in lemon juice and mix gently till it curdles.
  4. Once it is curdled strain it. Let it sit for 5 mins.
  5. Now scoop it into a container and serve.
