Granola muffins recipe a healthy and tasty breakfast muffin using homemade granola.
Granola is a cereal made with oats and nuts as main ingredients, it can be had with fruits and milk for breakfast.I usually make this and store for few weeks and we have it as a snack but this time wanted to try muffins and it turned out so so good.

I searched for few recipes but this one had buttermilk in it so found it a interesting twist so tried this recipe from betty crocker website and I should say this is one of the best muffins that everyone at home loved.The crunch on top is a icing on cake, so dont skip it.
Both the kids and amma loved it so much that they wanted me to bake it again so the next time I make granola this is a sure thing to bake.
Granola muffins recipe
Ingredients
Dry Ingredients:
- 1 cup granola + 2 tbsp for topping
- 1 cup wheat flour
- 1 tsp baking powder
- 1/4 tsp baking soda
Wet ingredients:
- 1 no egg
- 1/4 cup cane sugar
- 3/4 cup buttermilk
- 1 tsp vanilla essence
- 1/8 cup oil
Instructions

Preheat oven at 175 deg for 10 mins.To a mixing bowl add granola, wheat and baking powder.

Add baking soda to it.Mix well with a whisk.

To another bowl add an egg,buttermilk and cane sugar.

Add vanilla essence to it and mix well.

Add oil and mix it well.Now add this mixture to flour mixture.

Fold it together, the batter should be flowing not too thick or runny.Scoop out using a icecream scooper.

Line muffin liners on a muffin pan.Add the batter, sprinkle little granola on top.Bake in preheated oven at 175 deg for 15-18 mins or until the top turns golden.
Notes
- You can replace cane sugar with regular sugar too.
- You can replace wheat flour with maida.
- Sugar measure depends on the sweetness of granola so adjust accordingly.
- My granola batch already had salt in it so skipped salt.If you want you can add a pinch salt to the batter if your granola has no salt.
