Japchae (잡채雜菜) is a sweet and savory dish of stir-fried glass noodles and vegetables that is popular in Korean cuisine. Japchae is typically prepared with dangmyeon(당면, 唐麵), a type of cellophane noodles made from sweet potato starch; the noodles are topped with assorted vegetables, meat, and mushrooms, and seasoned with soy sauce and sesame oil.

Korean Japchae is a popular dish of korea. I made it using lots of vegetables and the seasoning is soy sauce, sugar and sesame oil. it is quite healthy as well.

Japchae or Korean Glass Noodles is a delicious recipe which you could make in few minutes. This is a popular korean dish.

Ingredients
  • Glass Noodles - 2 bunch
  • Carrot - 1 juliened
  • Spring Onion - 3 chopped
  • Capsicum - 1 juliened
  • Oil as needed
  • Spinach a bunch
  • Zucchini - ½ cup juliened
  • Onion - 1 sliced
  • Sesame seeds as needed
  • Sesame Oil - 2 tblsp
FOR SAUCE:
  • Garlic - 1 tblsp chopped finely
  • Soy Sauce - 1 tblsp
  • Sugar - 2 tsp
  • Salt to taste
  • Black Pepper to taste
Instructions
  1. Bring water to a boil. Add spinach and cook them for 2 mins. Drain and squeeze. Chop them and set aside.
  2. In the same water, add noodles and cook for 6 to 7 mins. Drain and set aside in the same bowl. Add sesame oil and toss well.
  3. Now heat oil in a pan, saute veggies light colour first and then dark colour. starting from onions, carrots and then zucchini, peppers and spring onions.
  4. Take that in a bowl.
  5. Mix garlic, soy sauce, sugar, salt and pepper.
  6. Pour this over noodles and toss well.
  7. Serve with some sesame seed on top.
