I always wanted to try roasted nuts with sunflower seeds, melon seeds as we as a family are fond of seeds and nuts, mittu is an exception as she tastes only very few. I have bought melon seeds for using for my recipes but never thought of using it as a snack. This idea of roasting melon seeds came to me when I had a pack of it lying around for a long time. You can serve this a tea time snack or pack it for kids snackbox too.
Roasted melon seeds recipe:
This is a very easy and quick recipe to make. Just roast melon seeds for 3-5 mins or until golden in low flame. Add your favorite seasoning along with salt.Toss well and enjoy. Store in an airtight container and enjpy this guilt free snack.
Storage:
- Keep in a clean dry jar without moisture.
- Keeps well for atleast 15 days in room temperature.

Roasted melon seeds recipe
Ingredients
- 1 tsp oil
- 1/2 cup melon seeds
- 1 tsp piri piri masala
- 1 tsp cheese seasoning
- salt to taste
Instructions

Add a tsp of oil. Measure and add melon seeds to a pan.Roast it in low flame.

Roast until golden.Switch off.

Add seasoning of your choice. I chose piri piri and cheese seasoning.

Add both the the seasoning along with salt.

Mix well until the masalas coat evenly.Enjoy or store for later use.

Store in a clean dry jar.
Notes
- Make sure to roast melon seeds evenly in low flame else it might get burnt easily.
- The seasoning is purely your choice.You can even use regular indian spice powders like red chilli powder, garam masala powder to spice it up.
- You can even use pizza seasoning or any italian seasoning if you like the flavour.
- I have used watermelon seeds you can use any seed you want.
- Make sure to add seasoning only after switching off.
- For baking : Bake in preheated oven at 200 deg C for 5-7 mins, keep an eye and keep tossing in between.
