A very popular salad in Karnataka named as Hesaru bele carrot kosambari. This can be served as a side with meals or can be had as such too. This is so tempting and attractive especially kids will like it by its look.

Carrot Kosambari Recipe:

To begin with first grate carrot and soak moong dal in water for an hour. Make the tadka ready with oil, mustard seeds, hing and  curry leaves. To a mixing bowl add carrot, along with soaked, rinsed moong dal, lemon juice prepared tadka, coconut and required salt. Mix it well. Serve immediately!

Serving and Storage :

  • You can serve it as  a sidedish with meals
  • It keeps well for  a day but depends on the climate too. As coconut is added I would recommend consuming it as fresh as possible.

Variations:

  • You can add cut cucumber with it.
  • Adding pomegrante gives it a nice taste too.
  • You can even add raw mango pieces for that tangy taste.
