Panakam popsicles recipe – A healthy refreshing summer treat using jaggery spiced with pepper,dry ginger and flavoured with cardamom.

What is panakam?
Panagam is a spiced drink made using jaggery, water spiced with black pepper, ginger powder and flavoured with cardamom and lemon. Panakam is a special drink made for Rama navami festival.
What is popsicle?
Popsicle is a frozen treat made with water, fruits, fresh fruits juice, milk or yogurt. There are a lot of variations to popsicles but they are usually icy and not creamy like icecreams.
Popsicle is a frozen treat and panakam is a refreshing summer treat so thought to combine these and hence my panakam popsicles came into action. I am a lover of homemade popsicles and my recipe collection justifies it. I just used my panakam recipe itself and made these popsicles and everyone at home enjoyed it especially kids.
Panakam popsicles recipe:
To begin with first add jaggery along with water then add black pepper, dry ginger powder, lemon juice and cardamom powder. Mix it well and then strain it. Pour into popsicles moulds and freeze for 8 hrs minimum or overnight. Once frozen, carefully dip the moulds in water, pull out the popsicles gently. Homemade panakam popsicles ready!
Variations:
- You can use powdered jaggery or crush jaggery and use it.
- Using cane sugar comes close in taste but jaggery works best. Sugar will not work for this recipe.
- If you don’t have popsicle moulds you can pour in small paper cups or even steel tumblers. Cover with aluminium foil and insert spoons or icecream sticks.

Panakam popsicles
Ingredients
- 2 and 1/2 cups water
- 1/2 cup powdered jaggery
- 1/2 tsp cardamom powder
- 1/4 tsp dry ginger powder
- 1/2 tsp pepper powder
- 1/2 lemon
- a tiny pinch of salt
Instructions

First to begin with take jaggery powder in a mixing bowl.

Add freshly crushed pepper,ginger powder, cardamom powder to it.

Next add lemon juice to it.

Mix it well.

Jaggery dissolved completely.

Strain.

Now pour into popsicle moulds.

Repeat to finish.

Close with lid.

Keep im freezer and freeze for 8 hrs minimum or overnight.

I freezed it overnight. So next day it looks like this.

Now for easy demoulding,take water in a bowl.

Dip each mould in water.

Gently pull out the popsicles.

Panakam popsicles ready.

Notes
- I used powdered jaggery so it dissolved quickly. If you use crushed jaggery it takes a bit more time to get dissolved. So if you have block jaggery you can grate it using a grater.
- I would recommend to use freshly crushed pepper and cardamom for more flavour.
- The color of the popsicles purely depends on the jaggery colour.
- I got 5 medium sized popsicles, I had around 1/4 cup extra panakam which kids enjoyed as such.

My tips while making panakam popsicles:
