Red rice flakes payasam | Tamil New Year recipes

Many years back, I mean more than 10 yrs, I heard my fried saying she had a several servings of red rice flakes payasam in an lunch get together. She asked me to try as well, but I did not take it serious as I make aval payasam very often. In recent few years only I have started buying red rice flakes and mostly make upma or north Indian style poha. I prepare whenever I feel like having something filling. But this is the first time I am making payasam and totally in love with it. So much flavour and texture in it.

📋Ingredients

  • Red rice flakes (I used thick vaierty)
  • Sugar
  • Milk
  • Cashews
  • Condensed milk (optional)

📋 Summary

First sieve out any impurities/ dust in red rice flakes. Roast it well in ghee and pressure cook it with milk and water for a whistle. Once done, add sugar and condensed milk. Adjust the consistency as needed with milk or water. Simmer for couple of minutes and finally garnish with some ghee fried crisp cashews.

📖Variations

You can skip the condensed milk and add sugar itself fully. Just one more tbsp, so total 3 tbsp of sugar is enough.

Jaggery can be added in place of sugar. Use ¼ cup of jaggery for this recipe.

  • Pressure cooker, 3 Litre

Ingredients

  • ¼ cup Red rice flakes I used thick variety
  • 2 tbsp Sugar
  • 1 cup Milk
  • 5 Cashews
  • 2 tbsp Condensed milk optional
  • 2 tsp Ghee

Instructions

  • Sieve red rice flakes in a metal strainer. Hand pick any impurities.
  • In a small pressure cooker, add a tsp of ghee and roast the red rice flakes. Roast for 2 minutes in low flame.
  • Add ½ cup water and 1 cup milk to it. Pressure cook for 1 whistle in medium flame.
  • Once done, add sugar, condensed milk. If you want you can add 1 powdered cardamom at this stage.
  • Simmer for couple of minutes. Switch off the flame and mix golden roasted cashews in the payasam.

  • I used thick variety, you can also use thin variety. It will get cooked faster. So you can even quick release the pressure or do over stove top.
