Milk tea is a special tea made with black tea and milk. This tea is usually a part of Hong Kong lunch. Hong Kong style milk tea orginates from British practise where black tea is served with milk and sugar. But here instead of sugar we use condensed milk and evaporated milk. Also they use a special tea strainer made of sack cloth bag. It is also called as “silk stocking milk tea” which originates from the appearance of the sackcloth tea leaf filter bag.
Hong Kong style milk tea uses several types of tea varieties to make black tea. The proportion of each tea is considered to be a secret of many commercial vendors. One of the variation uses condensed milk and evaporated milk instead of regular milk to give it a richer taste and feel.

It is not easy to find evaporated milk here in India, so I thickened full fat milk for a while then strained and used it. You can serve this milk tea chilled or warm.

To begin with first make tea first add boil water then add tea powder, tea bag. Simmer until we get a thick strong decotion, Switch off. To a serving glass add condensed milk, evaporated milk then add tea decotion mix it well and serve. The measure of each ingredient depends on your taste but the decotion should be a bit more for this recipe when compared to our usual tea.
Variations:
- Orginally they use evaporated milk, so if you get it use it. Otherwise use slightly thickened milk.
- I used condensed milk as sweetner but you can very well replace it sugar.
- I have used a combination of tea powder and tea bag to give a taste of 2 blends. You can any 2 tea varieties.

Hong kong style milk tea recipe
Ingredients
- 1.5 cups water
- 1.5 tsp tea powder
- 1 no tea bag
- 1/4 cup condensed milk
- 1/4 cup milk boiled,cooled
Instructions

First to begin with bring water to a boil.

Add tea bag and tea powder to boiling water.

Mix it well, Let it simmer for sometime. Swirl the tea bag to the pan handle so that it doesn't fall inside.

Simmer until it reduces little less than 1/2 cup. Switch off.

Strain and discard.

Strong tea decotion ready!

To a serving glass add condensed milk.

Next after that add milk. I used slightly thickened boiled milk.

Finally add tea decotion.

Mix well. Adjust sweetness and according to your taste preference.

Serve immediately!

- I used almost half and half ratio of milk, condensed milk : tea decotion. You can alter it according to your taste.
- You can replace condensed milk with sugar too.
- I used full fat milk.
- Make sure there is no malai formed.
- You can serve milk tea chilled with ice cubes too.
