Chilli garlic fried rice is a quick flavourful dish also one of the popular in Indo Chinese Cuisine.
Chilli garlic fried rice recipe with step by step pictures and video. It is one of the popular dishes in Indian restaurants next to veg fried rice. It is mildy spiced with full flavour of garlic making it such an aromatic rice.
I had this chilli garlic fried rice once in a buffet lunch and absolutely loved it amidst all the rice varieties. I could easily guess the ingredients and wanted to try it. Amma had grown spring onion in a small pot so wanted to use it up. And coincidentally this chilli garlic rice came to my mind. This was in the long pending to try list. I am so glad I tried as both the kids had it without any complaints.
I loved the fact that this rice is mild and flavourful making it a hit especially with kids.
Variations to chilli garlic fried rice:
- You can add vegetables like carrot, cabbage, beans, capsicum etc.
- I added small onion for more flavour, but you can add chopped big onion also.
- I used open pot method to cook rice but you can cook in pressure cooker too.
- If you dont prefer sauces just make it plain with just pepper and salt.
Serving :
- This rice goes well with chilli paneer, gobi manchurian etc.
- If you add vegetables this rice can be had as such too.
- I made a simple egg curry to go with it and it tastes so good.

Chilli garlic fried rice recipe
Ingredients
- 1 cup basmati rice
- 3 tbsp oil
- 1/4 cup garlic finely chopped
- 10 nos small onion sliced
- 3 tbsp spring onion
- 1 tsp soya sauce
- 1 tsp chilli sauce
- 1/2 tsp vinegar
- 1 tbsp chilli flakes
- 1 tsp crushed pepper
- salt to taste
Instructions

Add 1 cup rice to a mixing bowl, add water to it.

First soak in water for 20-30 mins. Set aside.

Rinse well atleast twice. Rinsing helps in removing starch resulting in nonsticky rice hence rinse well.

Drain water and set aside.

After that , boil water, add required salt and 1/2 tsp oil.

Add drained rice, give a quick mix and let it cook.

After 5 mins mash the rice and check. It will have a bite texture and the rice will break so need to cook further.So cook for few more mins.

At 8 mins : check by pressing the rice is easily mashable but not mushy. Keep checking otherwise rice would become mushy.

Switch off.

Immediately add the rice with water to a strainer. Let water strain.

Keep covered for 15 mins. Let water drain completely. Discard starch water collected.

Finally fluff it gently. Perfectly cooked fluffy basmati rice ready.Set aside

To begin with chilli garlic fried rice : First to a wok - heat oil, add garlic fry until golden, reserve a tbsp for garnish. Next add onion, spring onion and salt.

Give a quick saute until onions turn transparent. Then add soya sauce, chilli sauce and vinegar.

Give a quick saute.

Add cooked rice.

Add chilli flakes, remaining spring onion , crushed pepper.

Give a quick mix.

Finally toss well and switch off.

Notes
- Make sure your rice is cooked grain seperated and not mushy. It should be fluffy and grain seperated.
- I used chilli flakes but you can use red chilli paste instead.
- Sprinkling crispy fried garlic gives a texture while eating.
- I added salt while cooking rice also so adjusted accordingly.
- You can add crushed garlic however I prefer chopped garlic for this recipe.
