Delicious milk cake which is super easy to make and needs just four ingredients. Milk, Sugar, Lemon juice and Ghee. Also LOTS OF PATIENCE.

How to Make Halwai Style Milk Cake:

  1. Boil lots of milk in a large pot.
  2. Boil till reduced to 1/3rd
  3. Add in lemon juice little at a time.
  4. Cook till thickens
  5. Add little sugar at a time and keep cooking.
  6. Cook till it thickens.
  7. Spoon it into pan.
  8. Wrap it really well and set aside to cool.
  9. Slice and serve

Tips and Tricks for Milk Cake:

1)Cook milk in a large pot so it reduces a lot faster.
2)Scrape the sides of the pot so the reduced milk is added into the milk.
3)Add little sugar at a time only when milk is reduced and thickened.
4)Add sugar little at a time and keep cooking.
5)Wrap the pan really good with foil and towel. So the barfi cools a lot slower which creates a dark colour in the centre.

Ingredients
  • Whole Milk - 1 litre
  • Sugar - ½ cup or to taste
  • Ghee - 3 tblsp
  • Lemon Juice - 1 tsp
Instructions
  1. Take milk in a large pot and bring it to a boil.
  2. Now boil this and keep mixing and whisking. Scrape the sides of the pot and add it back into the milk.
  3. Boil till till it reduced to ⅓rd
  4. Now add in lemon juice and mix well. Keep cooking till it thickens.
  5. Add in sugar little by little and keep mixing.
  6. Cook till it thickens.
  7. Now add in ghee little by little and continue cooking on a low flame till it thickens and leaves the sides.
  8. Grease a pan with ghee to set the burfi. Pour the mix into the pan. Spread evenly and flatten.
  9. No wrap this in foil and wrap it in towel.
  10. Leave to rest for 4 to 6 hours.
  11. Unmould.
  12. Slice and serve.

11)Now the milk has even reduced.

12)Now start adding sugar little at a time.

13)You can add a tblsp of sugar at a time.

14)Keep adding sugar and mix well

15)Keep cooking and mixing till it thickens.

16)Add ghee little by little

17)Keep mixing.

18)Cook till the mixture starts to leave the sides of the pan.

20)Done

21)Grease a pan with ghee

22)Spoon filling in

23)Wrap it in foil

24)Wrap it in towel.

25)After few hours. Slice and serve
