Bean burrito, bean couscous cheese burritos

Bean, burrito couscous and cheese burritos, easy and tasty black bean lemon couscous with 3 cheese blend. Full video recipe.

When I was looking for recipes using black bean, I came through this simple burrito with few ingredients. It was made with leftover rice. But I used couscous. For this cheesy bean burrito, I bought organic 3 cheese blend (Mozzarella, Provolone, Cheddar). I totally loved the flavour. Not sure if it was because of the organic thing or by itself the 3 cheese blend is flavourful.

Made it with lemon cilantro couscous, but you can use leftover rice too to make it. Also in place of black bean you can use red bean. The bean cooked for this version is called refried beans. You can cook your own beans or use canned beans. I adapted this from the Kitchn

The procedure looks long. How to simplify it?

  • Use leftover rice or couscous and follow the same (add lemon juice and coriander to it)
  • Use canned bean to save bean cooking time.

Ingredients

For beans

  • 1 & 1/2 cup Cooked Black bean or 1 can
  • 1 onion
  • 3 cloves garlic
  • 1 tbsp red chilli powder
  • 1/4 tsp cumin powder
  • Salt
  • 1 tbsp Oil

For couscous

  • 1/2 cup couscous
  • 1 lemon
  • 3 tbsp coriander leaves chopped
  • Salt as needed

Burrito

  • 8 Whole meal flour tortillas
  • 2 cups 3 cheese blend
  • Sauce of your choice or fresh salsa

Instructions

Couscous:

  • In a mixing bowl, place the couscous. Boil required water. Add salt as needed, hot water, lemon juice to couscous. Mix well, keep covered.
  • In 10 to 15 mins, the couscous will fluff up and be ready. Mix coriander leaves to it and set aside.

Prepare bean filling

  • Soak black bean for minimum 1/2 hour. Cook it with required salt until soft.
  • You can pressure cook too (3 whistles in medium flame), but I did in open pot.
  • Cook with salt until really soft and gets mashed easily. Drain water and mash immediately. Heat a pan with oil and add chopped garlic and onion. Fry until soft/ starts to turn brown.
  • Add red chilli powder, cumin powder. Give it a mix.
  • In goes the mashed beans and some 1/2 cup water. Mix well.
  • Cook until the spices gets mixed with the bean. It will eventually turn thick. Takes roughly 2 mins.
  • Now our ingredients are ready. Take tortillas and cheese.

How to fold a burrito:

  • Soften the tortillas by heating it few seconds both sides over a griddle.
  • Now lets assemble the ingredients. Layer a bed of cheese first (be generous!)Do this in an end of the tortilla. Leave space in the sides as you see in the picture.
  • Next top it with the prepared bean filling. Do not overload. Just measure the same amount and spread for all.
  • Add some prepared couscous over it. Spread some sauce of your choice (I used hot chilli sauce) or even salsa for balancing the taste.
  • Fold both sides covering the two ends of the filling. Cover with the end of the tortilla from bottom over the filling. Wrap it as shown below. Watch video for better understanding.
  • Repeat to finish all.

Grilling the burritos:

  • Heat the grill and grease the surface slightly.
  • Once hot, place the rolled burritos with sealed side down. Cook each or until you see golden lines of the grill is over the burritos.
  • If you want it crispier, brush the burritos with generous butter. If you want soft, just grill as such.
