Sweet corn gravy recipe with coconut milk
Sweet corn gravy recipe with step by step pictures and video.This gravy is a basic onion tomato gravy but with the addition of coconut milk it lifts up the flavour of the gravy to an extra level.
As both my kids are fond of sweet corn,I buy sweet corn often and make cup corn with different flavours.Attimes I make gravy with it and this was one such gravy which tasted so good with coconut milk flavour.
What can be made with sweet corn?
Cup corn recipes like butter corn,masala corn,peri peri corn etc
You can use any heavy bottomed pan as the gravy needs to be simmered for a while before adding coconut milk.I used my new ceramic pan which I bought recently from homecenter 🙂
This gravy is versatile you can add any veggies along with it like capsicum, potato or a mix of veggies too.I have added spice level a bit more to balance the sweetness from sweet corn and coconut milk.
Sweet corn gravy recipe
Ingredients
- 1 cup sweet corn
- 1 cup water to cook corn
- 1 cup thick coconut milk
- 1 big onion finely chopped
- 2 nos tomatoes pureed around 3/4 cup
- 1.5 tsp ginger garlic paste
- 1/4 tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp garam masala powder
- 1/2 tsp cumin powder
- 1-2 tsp coriander leaves for garnish
- salt to taste
To temper:
- 1.5 tsp oil
- 1 tsp cumin seeds
- 1 no green chilli slitted
Instructions

Heat oil in a pan - add jeera, green chilli let it splutter then add onion,ginger garlic paste and required salt.Saute until golden.

Then add tomato puree,give a quick mix cook covered for few mins until raw smell leaves.Add turmeric,red chilli,garam masala and cumin powder.

Mix well saute for 2mins.Then add cooked corn along with water.Mix well,cook covered for 2mins.

Simmer and add coconut milk, mix well then garnish with coriander leaves, let it start to boil then switch off.

Serve hot with roti / pulao
Notes
- Do not add coconut milk when the flame is high, simmer and then add.
- Do not cook for more time after coconut milk is added just a short boil is enough.
How to make sweet corn gravy recipe:
- To a pressure cooker add corn kernels, add 1 cup water.
- Pressure cook for 3-4 whistles. Let pressure release by itself.Now open drain water and use the corn for recipes.
- Heat oil in a pan – add jeera, green chilli let it splutter then add onion,ginger garlic paste and required salt.Saute until golden.
- Then add tomato puree,give a quick mix cook covered for few mins until raw smell leaves.Add turmeric,red chilli,garam masala and cumin powder.
- Mix well saute for 2mins.Then add cooked corn along with water.Mix well,cook covered for 2mins.
- Simmer and add coconut milk, mix well then garnish with coriander leaves, let it start to boil then switch off.
Serve hot with roti / pulao
Variations:
- You can skip coconut milk and add regular milk too but the flavour will vary.
- Instead of adding tomato puree, you can finely chopped tomatoes too, saute till mushy and proceed.
- Add a tbsp of fresh cream for extra richness.
- Adjust spice level according to your taste and preference.
My tips while making sweet corn gravy:
- Do not add coconut milk when the flame is high, simmer and then add.
- Do not cook for more time after coconut milk is added just a short boil is enough.
- Serve with chapathi,roti or pulao.
