Stove top granola recipe a cereal made with oats,nuts and dry fruits.
Granola is a cereal made with oats, nuts and sweetner which can be mixed with milk and had for breakfast or even as a snack.Granola is usually baked but as many requested to post stove top version here is the recipe of stove top granola with jaggery as sweetner.
How to make granola without oven:
Granola is usually made by mixing all the ingredients and baked until crisp but alternatively we can make stove top version too.Just roast ingredients until slightly crisp and mixing with jaggery syrup(with perfect consistency).
What is Jaggery consistency?:
This jaggery consistency is the most important in stove top version as if the consistency is missed then you will not get crisp granola so keep checking until the perfect consistency is reached.Soft ball and cook for 2 mins further and you will get perfect crisp granola.If it reaches hard ball then it will become hard so I prefer between soft and hard ball.

Ingredients
- 2 cups instant oats
- 1/4 cup honey
- 1/2 tsp vanilla extract
- a pinch salt
- 1 cup jaggery
- 1/4 cup water
Mixed nuts:
- 1/4 cup badam
- 1/4 cup pistachios
- 1 tbsp figs
- 2 tbsp cashews
- 1 tbsp dried apricots
Instructions

First heat 1 tbsp butter let it melt add the nuts and fry for 2 mins, remove and set aside.

In the same pan add oats and fry for 5 mins in low flame without major color change, remove and set aside.Now to a sauce pan add jaggery and water let it melt completely.

Once melted switch off.Strain and add to a fry pan.Let it boil for few mins.

When it starts to turn thick and boil rigourously, take a bowl with little water - check by addding few drops of the syrup in the bowl it should form a loose soft ball.Keep checking until its formed.

Once formed boil for exactly 2 mins.Switch off and take the pan off the flame.Add roasted nuts and oats to it.Add honey.

Add vanilla extract to it and mix wel.Transfer to a bowl and set aside for 30 mins.It will look sticky at this stage but will get seperated after few mins.

Break if its lumpy.Spread it and cool down.Store in a dry airtight container.When needed mix with hot or chill milk and have it for breakfast and enjoy!
Notes
- You can use any nuts and dry fruits of your choice but make sure to keep an eye on the measures.
- I used quick cooking oats but you can use rolled oats too but make sure to roast for few more mins as it takes time to cook.
- Jaggery can be replaced with palm jaggery or brown sugar too.I am not sure of cane sugar as I havent tried it.
- You can use raisins too but add it at the last stage if you are adding.
- Honey should not cooked as per ayurveda so make sure to switch off and add.
- Keeps well for a month in room temperature itself.
