This mushroom spinach soup is all about flavor and rustic texture. It has chunky pieces of mushrooms and silky spinach leaves.
I used vegetable stock and made the soup like a clear soup. The soup is very light and not at all heavy since it is clear. - Ghee / Oil or Butter - 1 tsp
- Mushrooms - 2 cup sliced
- Spinach - 2 cup chopped finely
- Ginger Garlic paste - 2 tsp
- Water or Vegetable Stock or Chicken Stock - 3 to 4 cups
- Salt to taste
- Black Pepper to taste
- Cornflour - 1 tblsp
- Water - 2 tblsp
- Heat oil in a pan. Add in mushrooms and cook for 4 to 5 mins.
- Now add in spinach and mix well.
- Add in water or veg stock and bring it to a boil.
- Cook for 10 mins.
- Add in salt, and pepper.
- Add in cornflour mixed with water and mix well.
- Serve hot.
