One Pot Chicken, Rice & Veggie with Step by Step Pictures.

This chicken rice is loaded with flavour and veggies. It taste so fantastic with fragrant rice and chicken. This is one recipe which has tons of vegetables and chicken. The rice itself is fragrant and nutrients.

This rice is a one pot feast. It is a recipe which can be made using bits and pieces lying in your fridge. You dont need any sidedishes for this. Super easy to make.

Stir Fry Egg Rice Recipe

This One Pot Veggie, Chicken & Rice taste so delicious and is easy to make. This rice is not only easy to make but is very healthy as well.

Ingredients
FOR CHICKEN:
  • Boneless Chicken Thighs - 6
  • Oregano - 1 tsp
  • Chilli flakes - 2 tsp
  • Salt to taste
  • Black pepper to taste
  • Cumin powder - 1 tsp
  • Chilli Powder - 1 tsp
  • Salt to taste
FOR RICE:
  • Basmati Rice - 1.5 cup
  • Oil - 3 tblsp
  • Butter - 3 tblsp
  • Onion - 1 chopped finely
  • Garlic - 6 cloves chopped finely
  • Tomatoes - 2 chopped finely
  • Capsicum - 1 chopped finely
  • Mushrooms - 10 chopped
  • Broccoli - 1 cup
  • Vegetable stock or Chicken Stock - 3 cups
  • Salt and pepper to taste
Instructions
  1. Mix chicken with spices and set aside.
  2. Heat oil and butter in a pan, add in onions, garlic and saute for 2 mins.
  3. Add in veggies and stir fry for 2 mins.
  4. Add in rice and stir well.
  5. Add in stock and bring it to a boil. Add salt and pepper to taste
  6. Add chicken in and cover and cook on low heat for 15 to 20 mins.
  7. Serve.

1)Take chicken in a bowl

2)Add oregano, chilli flakes, salt

3)Add in crushed pepper

4)Add in cumin powder

5)Add in chilli powder or paprika

6)Mix well

7)Heat oil in a pan

8)Add in onions and garlic

9)saute for a min

10)Add in mushrooms, peppers and tomatoes

11)Add in broccoli

12)Saute for a min

13)Cook this for few mins

14)Add in basmati rice

15)Stir fry for 2 to 3 mins

16)Add in vegetable stock or chicken stock

17)Bring it to a boil

19)Place chicken into this

20)Cover and cook on low heat till rice is cooked

21)Now it is done

22)Fluff up the rice

23)Serve
