Curd Rice, Potato Poriyal & Mangoes – Kids Lunch Box Ideas 26

There is noting better to pack in your kids lunch box than curd rice. Curd rice tastes so good and stays good in a lunch box. Potato poriyal is perfect with curd rice. Maha loves garlic pickle so i added some in.

This is how I make curd rice. Add 4 cups of water to 1 cup rice and pressure cook for 5 whistle. Let the pressure release by itself. Open and mix well so the rice is mashed. Let the rice cool down.

Add milk and make it into a semi thick consistency. Now add 1 tbsp curd and mix well. The reason for adding less curd is by lunch time the yogurt will get sour. So add more milk and less yogurt so curd rice dont turn sour.
Heat ghee and temper with some mustard, urad dal and asafoetida. Pour over rice and mix well. That’s it.

Mangoes are rich in fiber and vitamins which helps in digestion.
