Nendran Chips | Kerala Banana Chips

Nendran Chips is a crispy, tasty snack made by slicing Nendran Banana and frying it. Nendran Chips is a very popular snack from Kerala Cuisine that will make not end with just one of it. Nendran Chips recipe is explained in this post with step by step pictures and video.

Nendran Banana Chips is a crispy snack one of the integral part of onam sadya menu.It is also known as ethakka upperi in malayalam.

This Nendran Banana Chips is mittus all time favorite.I love coconut oil flavour the best.I have not seen many kids who are so specific in snacks too and the lil one is in the list. She is not fond of biscuits, cakes, sweets etc, she asks for cream biscuits licks the cream clean and reserves the biscuits for her mother.Though we dont make savoury snacks often at home, she likes ompodi and nendran chips very much.She fondly calls it yellow banana chips.

Whenever we visit perimmas house, she packs us nendrangai and we mostly end up making this chips for her sake.I have always seen her slicing the chips directly in oil effortlessly.

So kattanchaya(black tea) and nendran chips ready for evening teatime 🙂

Why is my chips not crispy?

  • If flame is low when you slice the chips, it will become soggy and will not turn crisp.Discard the batch put flame to medium then add next batch.Adjust flame accordingly.
  • Chips will drink more oil too if the flame is not perfect.So always adjust flame accordingly.

Ingredients

  • 2 nos raw nendran banana
  • 2 tsp turmeric powder
  • 1 cup water
  • salt to taste
  • coconut oil to deep fry

Instructions

  • Take a bowl add turmeric powder, salt and water. Mix well, Set aside.
  • Slit the banana skin and peel the skin off.
  • Keep in immersed in water to avoid darkening. Heat coconut oil in medium flame - Slice it directly in hot oil. The flame should be medium when you slice.
  • Immediately add prepared turmeric salt water around 2-3 tsp for each batch.
  • Turn over and fry until the 'shh' sound stops and the chips is light and crisp before you take it out. Take out and drain in tissue paper or paper towel.
  • Cool down and store in airtight container. Repeat to finish. Fry in small batches, do not crowd. Enjoy Nendran Chips!

  • Make sure to fry only in medium flame. If flame is low then the chips may turn soggy.
  • My slicer makes very thin slices just like wafers so each got done in just 2 mins. Keep an eye else it will burn easily.
  • Make sure to be a safe distance as while adding turmeric water it may splutter sometimes.
  • You can even slice in a plate then add to hot oil if you are a beginner. Keep hands at a safe distance while slicing. Before when I started I used to slice in a plate then add them to deep fry, but we need to be careful as it tends to stick easily. Now after getting used to frying nendran chips, I am frying directly in hot oil.
  • Always keep the nendran bananas immersed in water / salt water to avoid darkening 
  • Use a slicer that gives thin slices

Nendran Banana Chips Recipe Step by Step
