Condensed milk Coffee | Vietnamese style

Condensed milk coffee, how to make Vietnamese style iced coffee with step by step photos, quick video. A favorite refreshing drink of all the beverages.

Phin filter

I bought this Vietnamese Phin filter (slightly different from traditional) during my holiday trip in Vietnam. The traditional one is mostly made out of steel and have an extra plate. Mine was from a souvenir shop bought for keep sake, yet decently does it’s job.

Brewing chamber

Here are the parts of the one I have. It have a Brewing chamber with perforated plate and lid. A collection cup. There will be a separate perforated plate after the brewing chamber in traditional ones, but it’s missing in this.

Instead, It has a saucer. I have already tried few times, but since this has larger holes, the coffee drains pretty fast if we don’t do it with knack. I could related this filter with out South Indian filter so much, that’s why I bought it in first place.

The recipe and method may not be authentic, but sure is a delicious one for a change.

Ingredients

Coffee : The most popular is the Robusta dark roast, though couple of other varieties are available widely. The popular brand we get in Singapore is Trung Nguyen coffee (online).

I used the coffee ground I had at home though. You can make shortcut versions as well using Instant coffee, just for a different take of coffee with condensed milk.

Condensed milk: Sweetened condensed milk does the magic in this recipe, making it smooth and rich, balancing the acidity in coffee. I used Nestle but the popular one used is Longevity brand (I have not seen this here in Singapore).

Taste

Deep in taste, flavor and sweeter side. One of the main reason I loved it. Because of condensed milk, it is smooth and rich as well. It can be had both warm or iced. I love iced version best.

The strength of the coffee and sweetness level can be varied according one’s personal preference.

My notes

I forgot to place the condensed milk first in the collection cup, over which the coffee is usually dripped and mixed later. You can do this if you exactly know your measurements to suit your taste.

If you want you can mix some water to reduce the strength as needed.

I avoid blooming step where first you add little water and wait for it absorb and then add the rest of the water. My Phin have large holes so this makes my coffee less in strength and flavor. Even if you do the blooming step, again press the coffee for it to brew strong.

Top tip

  • It is important to press the coffee ground, otherwise the brewed coffee will be less in strength. Even if pressed too hard, it will take for ever to start dipping. So be gentle.
  • You can also do a second brew over the same for lighter coffee to enjoy as such (warm).

Ingredients

  • 2 tbsp Coffee ground
  • 3 tbsp condensed milk
  • Hot water
  • Ice cubes

Instructions

  • First, take out the perforated stand inside the brewing chamber and place 2 tbsp of ground coffee in it.
  • Level it gently and press using the stand. Place over the collection cup (Place condensed milk if you exactly know how much you need)
  • Pour hot water over it to fill it. Depending on the strength you need, you can use from 160 ml to 200 ml. This also varies with the coffee ground you use. Close with lid and set aside.
  • Wait for 5 mins to brew.
  • Mix condensed milk as needed. If you taste it, should be on sweeter side with a slight strong taste from coffee. Not bitter. If it is, then dilute with water or add more condensed milk.
  • Mix well to make both blend well. It should look smooth.
  • Fill the serving glass ¾th with ice cubes. Pour the mixed coffee over ice cubes.
  • Mix to enjoy.

Though we add so much ice, because of condensed milk’s richness it will not be tasting diluted at all.
