Masala Oats Recipe, Vegetable masala oats

Masala oats is a comfort food, made healthy with added vegetables. Oats need not be boring! It can be made yummy with spices, masalas lingering in your mouth.

Can be made for your breakfast, lunch for one or even as an early dinner. Perfect when you feel like avoiding rice.

Ingredients

I used organic rolled oats for this recipe. But you can use any variety like quick cook or steel cut. Just the cooking time and water quantity will vary.

I just powdered as I like the texture that way. Otherwise you can use as such as well.

Vegetables – I used whatever was available with me to add. Green beans, green peas, capsicum. Carrot was not in stock but I recommend adding it.

Spice powders – I added my sambar powder (all rounder, universal curry powder 😁) for flavor, red chilli powder, garam masala powder and turmeric powder for color (as well as health benefit).

Other than this, the usual ingredients – onion, tomato, green chilli and coriander leaves.

Substitutions

This is naturally gluten free and vegan. But make sure the ingredients you source are also specific diet friendly.

  • Ginger garlic paste – You can use minced fresh ginger and garlic along green chilli.
  • Sambar powder – use ½ tsp of each red chilli powder and coriander seeds powder to replace it. You can also use store bought sambar powder (Aachi & Sakthi are close to mine) or even the curry powder you get widely in groceries easily.
  • Garam masala powder – Actually I love to use kitchen king masala than garam masala. If you have kitchen king masala, you can use ½ of it plus garam masala for perfect balance.

You don’t mind using Instant noodles masala? Easily substitute it for sambar powder + garam masala and add the noodles spice mix alone. That reminds me to link to my own quick noodles masala.

Variations

The consistency of this dish can be varied depending on your own preference. Want it dry, you can definitely make it by reducing the water content and cooking slowly. If you prefer soupy, increase water quantity.

  • Spicy – add a sprinkle of crushed black pepper or pepper powder.
  • Special – Can be made flavor specific just like we get in packs. For example, add bisi bele bath powder for a twist.
  • Kid friendly – Skip the chilli and make it less spicy. You can sneak some mashed dal and make it kichdi way as well. But since it’s flavor is similar to that of Maggie, they wouldn’t complain at all.

Storage

Store the leftover in fridge after cooling. The recipe I provided here comes for 2 servings generously. So I keep the rest for another meal in the same day. It stays good in fridge for couple of days.

Just reheat with a pinch of salt and a dash of water to loosen up as you heat.

Top tip

I used my Ikea Carbon steel pan. Suggest to use some heavy bottom or non stick Kadai to avoid oats getting stuck to the bottom of pan. A

Ingredients

  • 1 cup Rolled oats
  • 1 Onion
  • 1 Tomato
  • 1 Green chilli
  • 1 tsp Ginger garlic paste
  • 1 tsp Sambar powder
  • ½ tsp Red chilli powder
  • ½ tsp Garam masala powder I used ¼ tsp of each garam masala & Kitchen king masala
  • ¼ tsp Turmeric
  • 2 tbsp Coriander leaves
  • 1 tsp Lemon juice optional
  • Salt as needed

To temper

  • 2 tsp Oil
  • ½ tsp Cumin seeds

Instructions

  • Gather the ingredients needed ready.
  • I powdered my rolled oats coarsely as I like that looks and texture. Also it gets cooked fast.
  • Use only pulse option in the mixer or grind in blasts rather than continuously running the mixer. This ensures even powdering.
  • Heat a pan with oil. Temper with cumin seeds. Let it get roasted.
  • After that, in goes finely chopped green chilli. Give it a fry to let the spice infuse in oil. Then add finely chopped onion, green peas, beans, capsicum, tomato.
  • Cook for a minute. After that, add ginger garlic paste.
  • Continue by cooking for another minute in medium flame with a pinch of salt. Add all the powders – Turmeric and spice powders.
  • Give it a quick stir in low flame.
  • Tip in water and required salt. Bring to boil.
  • Add powdered oats in sprinkled way as you stir.
  • Please act quick and careful because it may form lumps. Even if it does, you can stir in mashed way to get rid as soon as possible before lumps harden.
  • Cook in medium flame covered for 5 minutes.
  • Mix well and switch off flame.
  • Garnish with coriander leaves, lemon juice if desired.

  • While cooking make sure to stir in between. Otherwise will get stuck to bottom.

Enjoy warm as such or with a dash of curd/ pickle. I even at times add a splash of rasam as it goes well in this.
