Why my kozhukattai turns hard?

  • If the kozhukattai dough is tight and hard, your kozhukattais may turn hard.
  • If the kozhukattais are steamed for a long time than required then it may turn hard.

What rice flour to use for kozhukattai?

  • I use homemade idiyappam flour
  • You can use store bought idiyappam flour or kozhukattai flour.
  • Do not use usual rice flour – use only rice flour that is named as idiyappam flour or kozhukattai flour.
