Erachi Choru Recipe with Step by Step Pictures. Kari Choru or Kari Soru Recipe is a keralan favorite. It is also called as Mutton Rice. You can substitute mutton with beef or chicken too.
Kerala Erachi Choru Recipe is quite popular Recipe. In this Kari Choru Recipe rice and meat is cooked with tons of spices which adds a nice flavour to the dish. This recipe is best when served with raita and papad.
Kari Choru Recipe or Erachi Choru Recipe is spicy and strong tasting by itself, so you need some cooling raita on the side to make it more tasty. You can make my onion raita for it. You can check my other raita recipes too.

Tips for Making Erachi Choru:
1)The total water content should be 1:2. For 1 cup rice you need 2 cups water. You can reduce the water to 1.5 cup too.
2)You can make it with chicken instead of mutton. For chicken you dont have to pressure cook. Just add it in the pot and cook for 15 mins and then add water and rice.
3)Taste the water before adding rice and adjust salt, chilli powder. The water has to be little salty so the rice will be flavourful.
For Making Kari Choru with Chicken. Here is the Process of Erachi Choru Chicken Recipe:
1)Replace mutton with 1 kg chicken in the recipe.
2)Once chicken is mixed with masala. set aside.
3)heat biryani pot with ghee and add spices.
4)Add chicken directly into the pot and cook for 15 mins.
5)For 4 cups of rice add in 6 cups of water into the chicken and add rice.
6)Cook on medium low heat till it is done. it will take around 15 to 20 mins.
7)Turn off the heat and leave for 15 mins.
8)Serve with raita.
- Mutton - 1 kg
- Basmati Rice - 4 cups
- Onion - ¾ kg
- Tomato - 4
- Green Chillies - 6
- Ginger Garlic Paste - 3 tblsp
- Chilli powder - 2 tblps
- Garam masala powder - 2 tblsp
- Mint Leaves - ¾ cup
- Coriander leaves - ¾ cup
- Curd - 1 cup
- Salt to taste
- Coriander Powder - 2 tblsp
- Turmeric Powder - 2 tsp
- Ghee - 2 tblsp
- Cardamom - 10
- Cloves - 5
- Cinnamon - 1 piece
- Star anise - 1
- Fennel seeds - 2 tsp
- Coconut Oil - 2 tblsp
- Water - for 1 cup rice you need 2 cups water
- Soak basmati rice for 30 mins.
- Chop onions in a food processor. Chop tomato, mint, coriander, green chillies in a food processor.
- Take mutton in a pressure cooker. Add onions, tomato mix, curd, ginger garlic paste, salt and spice powders. Mix well. Add coconut oil and mix well.
- Pressure cook this for 5 to 7 whistle. Once mutton is cooked, drain the liquid from it.
- In a separate biryani pot, heat ghee and add whole spices.
- Add in the stock, extra water and exta chilli power, salt and gaam masala powder.
- Once this comes to a boil. Add in drained rice and cook till rice is 50 percent done.
- Now add in the drained mutton and mix well.
- Cover and cook on medium low heat for 10 to 15 mins.
- Turn off the heat and let it sit for 30 mins.
- Now fluff up the rice and serve.

20)Add extra chilli powder and garam masala powder
21)Cover and bring it to a boil

22)Add in soaked basmati rice
23)Mix well
24)Cook till rice is half cooked
25)Add in mutton
26)Mix well
27)Cover and cook on medium low heat for 15 to 20 mins
28)Once rice is cooked, set aside for 30 mins
29)Serve
