Pillow cakes are a easy recipe which you can make for kids if they demand. This recipe takes hardly 10 mins to make and cook. Perfect for kids snacks.

Ingredients
  • Whole Wheat Flour - 1 cup
  • Baking Powder - 1 tsp
  • Sugar - ½ cup
  • Egg - 1
  • Milk - ½ cup or as needed
  • Oil - 3 tblspn
  • Vanilla Extract - 1 tsp
  • Sprinkles as needed
  • Butter for greasing mould
Instructions
  1. Take oil, sugar, vanilla and egg in a bowl and mix well till combined.
  2. Now add in flour, baking powder and fold gently.
  3. Pour milk and fold gently till smooth batter.
  4. Add sprinkles and mix well.
  5. Heat the sandwich maker and grease with some butter.
  6. Pour batter and cover it.
  7. Cook for 5 to 6 mins till it is cooked.
  8. Remove and serve.

Rose lassi recipe

rose-lassi-flavourRose lassi is a delicious, flavourful and hearty drink to treat yourself if you are a rose flavour fan. My most favorite of all lassi recipes.

I already had in my mind what if we add rose syrup to make lassi. I love adding rose essence in my sweet lassi usually. But somehow didn’t. Last week I had this in Muthu’s curry. I was taken to another world after taking one sip as it was so flavourful just like the rose milk flavour I used to have in my childhood. I appreciated and relished each sip until last drop.

I wanted to know which brand syrup they use. Generally I shy away asking such questions in restaurants how they made or what brand, but this one, I had to. The girl was sweet enough to go inside the kitchen and check the cupboard to tell me it was F&N. We get it in Fairprice, but it is very large bottle. I should buy and keep next time 🙂

If you want to avoid artificial colours and flavour, use few drops of beetroot extract or natural food colour and pure rose extract instead of rose syrup.rose-lassi

Rose lassi

Rose lassi is a delicious, flavourful and hearty drink to treat yourself if you are a rose flavour fan. My most favorite of all lassi recipes. 

  • 1 cup yogurt/ curd (not sour)
  • 2 tbsp rose syrup (adjust as per your taste)
  1. Take chilled curd and rose syrup in a mixie jar. Blend until smooth and frothy.
  • If you want to make it more richer, use 1 tbsp cooking cream.
  • Adjust rose syrup according to the sour level of curd.
  • Please note if using just the  ready made rose milk mix (just colour and flavour) that is meant to be added few drops alone, you have to follow the instructions given in the cover. Use sugar for that as needed.

Rose lassi ingredients:

Ingredients
  • Crackers - 12
  • Sugar - 2 tblsp
  • Butter - 3 tblsp
  • Condensed milk - ¼ cup or more
  • White Chocolate Chips - 1 cup
  • Sprinkles for decoration
Instructions
  1. Take crackers, sugar in a blender and powder them fine.
  2. Add in butter and condensed milk and grind them.
  3. Take small portion of the dough and roll it. place it in a plate.
  4. Place the balls in freezer for 30 mins
  5. 'Melt white chocolate in a microwave safe bowl.
  6. Coat the balls in the chocolate and top with sprinkles.
  7. Chill for few hours in fridge.
  8. Serve

1)This stays good for a week in a air tight container in fridge.

Ingredients
FOR BATTER:
  • All Purpose Flour / Maida - 1 cup (120 grams)
  • Baking powder - 1 tsp
  • Cinnamon Powder - 1 tsp
  • Apples - 1 peeled and chopped
  • Milk - ½ cup (120 ml)
  • Brown Sugar - ½ cup (100 grams)
  • Oil - 4 tblsp
  • Vanilla Extract - 1 tsp
FOR CRUMBLE:
  • All Purpose Flour / Maida - ½ cup (60 grams)
  • Salt a pinch
  • Cold butter - ½ cup
  • Instant Oats - 2 tblsp
  • Walnuts - 3 tblsp
  • Sugar - 3 tblps
Instructions
  1. Preheat oven to 200 degree C. Line muffin pan with liners and set aside.
  2. Start by making crumbles. Take flour in a bowl, add in salt and mix well.
  3. Add butter and rub it into the flour.
  4. Add in sugar, walnuts and oats and mix well. Set aside in fridge till needed.
  5. Now make apple crumble muffins batter. Take flour, baking powder and cinnamon in a bowl and mix well.
  6. Add in chopped apples and mix well.
  7. In a separate bowl mix milk, brown sugar, oil and vanilla and mix well.
  8. Pour it into the flour mix and fold gently.
  9. Scoop this into the mould and top with crumbles.
  10. Bake for 20 to 30 mins.,
  11. Remove and serve warm.
Notes
1)You can make the crumble topping ahead and store in a ziploc bag in fridge for upto a week. You can store in freezer for more than a month.
2)Muffins can be baked and stored in freezer. Reheat in microwave when serving.
