Potatoes are heavenly bodies seeded underground by God for us to cook, relish & enjoy! Not only the kids like cartoon – Mr.Potato – they like it as a vegetable too! Potato is the only vegetable that is liked by all the kids and we can be ensured that the lunch box comes back empty when packed with Potato or Potato related recipes. I believe Potato is the most consumed vegetable across India, if not for the entire world. Potatoes are daily essentials like onion, tomato, coconut which relieves ourselves from cooking pressures of time, easiness and tastiness.

Are Potatoes healthy?

Potatoes are commonly associated with unhealthy fried and processed foods. Also because of their starch content, many people believe they should limit their intake. Studies reveal a different picture. Yes – Potatoes are rich in vitamins, minerals and antioxidants, which make them very healthy. Studies have linked potatoes and their nutrients to a variety of impressive health benefits, including improved blood sugar control, reduced heart disease risk and higher immunity.
Potatoes contain resistant starch, which may help reduce insulin resistance. In turn, this can help improve blood sugar control. Potatoes are naturally gluten-free, which makes them an excellent food choice for all ages. Studies have shown that potatoes are among the most filling foods.

Boiling or baking or frying?

Potatoes can be prepared in many ways, including boiled, baked, fried and steamed. Boiling / Steaming or baking potatoes are healthier way of cooking the Potatoes. Frying potatoes may dramatically increase their calorie content if you use a lot of oil and may result in weight gain when consumed in large quantities. Instead of frying, try slicing potatoes and then roasting them in the oven with a light drizzle of oil. It is good to consume the potatoes with skin as most of the nutrients are located there.

Buying Potatoes

Select evenly sized tender potatoes and clean them well before cooking. Do you know – The harder potatoes are the best ones? Do not select the soft ones, wrinkled ones, greenish ones and those which have cut marks. It is not necessary to store potatoes in refrigerator and they can keep good for almost 2 weeks. However storing in refrigerator will increase its shelf life by couple of more weeks. Also do not wash potatoes while storing as dry ones tend to keep long. Potatoes are the most affordable and delicious vegetable across all the times of the year – so make it every time in your vegetable buy list!

Potato can be boiled in pressure cooker, instant pot or baked in oven, air fryer. Also it can be cooked in a pan with water. Pricking few holes after boiling the potatoes will enrich the dish that you are going to prepare.

4.Do I need to peel the skin of potato while cooking?

It is best to retain the skin as the nutrients are banked at the skin – So use with skin at all possible times.

5.Can I cook Potato with Non veg?

Yes Potato can be cooked along with Chicken and mutton. However since their boiling times are different, boil separately and add together at the end.
