Schezwan Fried Rice is an Indo Chinese recipe. When I made schezwan sauce at home I immediately listed down the recipes that I wanted to try using it, hence the line up of Schezwan Recipes. About Schezwan Fried Rice

Schezwan Fried Rice is a popular Indo-Chinese dish that combines the flavors of Chinese fried rice with Szechuan Sauce. Schezwan Sauce is fiery, bold, spicy and aromatic loved by many.

Schezwan / Sichuan / Szechuan is a style of Chinese cuisine originating from Sichuan province in southwestern China. Schezwan Sauce has bold flavours, especially the pungency and spiciness resulting from liberal use of garlic and chillies. [Source : Wikipedia].

I have used Homemade Schezwan Sauce but you can use storebought sauce too. Alternatively I have given the recipe to make instant schezwan sauce to just use for one recipe instead of storing, do check in tips section. Homemade schezwan sauce makes the fried rice spicy, tangy with chilli, peppers, garlic and vinegar.

You can garnish Schezwan fried rice with chopped spring onions but I would suggest to make this fried rice only with spring onion as it gives such a nice flavour to any chinese dish!

In restaurants, fried rice is usually made in a large wok keeping the flame high to get the smokey flavour. At home you can either use a kadai or wok or even fry pan to make fried rice.

Schezwan Fried Rice Ingredients

  • Rice – You can use long grained basmati rice, regular basmati rice or even jasmine rice.
  • Vegetables – Veggies is absolutely your choice you can add onion, carrots, spring onion, cabbage and capsicum. In addition you can also add mushrooms, corn etc.
  • Sauces – Schezwan sauce is the main sauce used here. In addition soya sauce, tomato chilli sauce is also added.
  • Flavourings – Garlic and pepper adds more flavour to this dish.

Schezwan Fried Rice

Ingredients

  • 2 cups cooked basmati rice
  • 2 tbsp oil
  • 1 tsp garlic chopped finely
  • 1/2 tsp spring onion white part
  • 2 small red chillies
  • 1/4 cup onion chopped lengthwise
  • 1/2 cup carrot chopped lengthwise
  • 1/2 cup cabbage chopped lengthwise
  • 1/4 cup capsicum chopped lengthwise
  • 1/2 tsp soya sauce
  • 1 and 1/2 tbsp schezwan sauce
  • 1 tsp chilli sauce optional
  • 1/4 tsp vinegar
  • 1/4 tsp sugar
  • 1/2 tsp pepper powder
  • 1 tbsp spring onion green part
  • salt to taste

Instructions

  • Soak 1 cup basmati rice in water for 15 mins.
  • Set aside undisturbed. Soaking helps in giving grain seperated and also soft fluffy rice.
  • Rinse it well until starch water is washed off. Drain water completely.
  • To a sauce pan add 4 cups water – bring it a boil add required salt.
  • Add drained rice to it.
  • Give a quick mix and cook in low medium flame for 6-8 mins.
  • Rice should be slightly aldente – should have a bite. Rice should be soft but not mushy – only when pressed hard it should be mashed that is the right stage. Immediately switch off.
  • Transfer to a colander drain water completely.
  • Spread it over a plate to cool down. Set aside.
  • Heat 2 tbsp oil in a pan, add 1 tsp garlic, 1/2 tsp spring onions white part and 2 small red chillies.
  • Give a quick fry for a min.
  • Add 1/4 cup onion, 1/2 cup carrot, 1/2 cup cabbage, 1/4 cup capsicum.
  • Saute for 2 mins in medium high flame.
  • When the veggies start to shrink stop sauteing. Add 1/2 tsp soya sauce, 1 and 1/2 tbsp schezwan sauce, 1 tsp chilli sauce, 1/4 tsp rice vinegar, 1/2 tsp pepper, 1/4 tsp sugar, salt to taste.
  • Give a quick saute.
  • Add 2 cups cooked rice.
  • Give a quick mix without breaking the rice.
  • Add 1 tbsp spring onion green part.
  • Give a quick mix.
  • Schezwan Fried Rice is ready!

Notes

  • If you don’t have schezwan sauce in hand, for an instant version soak kashmiri red chillies in hot water for 10 mins and grind it to a paste. Then add chilli tomato sauce, chopped garlic and ginger mix well. Heat oil cook it for few mins in medium flame. Now your schezwan sauce is ready. You can add this replaciung schezwan sauce though it will not give you the exact taste as schezwan sauce gives, it will still taste good.
  • You can even use leftover basmati rice for this recipe.
  • You can soak basmati rice for 15 mins then pressure cook with 1 cup rice : 1.5 cups water ratio(rice:water) for 2 whistles in medium low flame. If using pressure cooker you can use this method.
  • Use freshly ground pepper for a great flavour.
  • Sauteing the veggies in high flame gives a nice smoky flavour and also helps retain its crunchiness without the raw smell.
  • Cook rice perfectly not too mushy or undercook it.It should be soft yet grains separated this can be attained easily by soaking rice then pressure cooking.
  • Make sure to toss the fried rice in oil to avoid sticking. Also let it cool for a while then add it.

Schezwan Fried Rice Recipe Step by Step

1.Soak 1 cup basmati rice in water for 15 mins.

2.Set aside undisturbed. Soaking helps in giving grain seperated and also soft fluffy rice.

3.Rinse it well until starch water is washed off. Drain water completely.

4.To a sauce pan add 4 cups water – bring it a boil add required salt.

5.Add drained rice to it.

6.Give a quick mix and cook in low medium flame for 6-8 mins.

7.Rice should be slightly aldente – should have a bite. Rice should be soft but not mushy – only when pressed hard it should be mashed that is the right stage. Immediately switch off.

11.Give a quick fry for a min until golden.

12.Add 1/4 cup onion, 1/2 cup carrot, 1/2 cup cabbage, 1/4 cup capsicum.

13.Saute for 2 mins in medium high flame.

14.When the veggies start to shrink stop sauteing. Add 1/2 tsp soya sauce, 1 and 1/2 tbsp schezwan sauce, 1 tsp chilli sauce, 1/4 tsp rice vinegar, 1/2 tsp pepper, 1/4 tsp sugar, salt to taste.

15.Give a quick saute.

16.Add 2 cups cooked rice.

17.Give a quick mix without breaking the rice.

18.Add 1 tbsp spring onion green part.

19.Give a quick mix.

Expert Tips

You can serve Fried Rice with any manchurian sauce or gobi / baby corn manchurian etc. Any chilli dishes will go well with fried rice too. Schezwan Chicken, Chilli Paneer or Chilli Baby Corn is the best combo for this fried rice.
