After packing mittus lunch box I had little of leftover rice and wanted to use it up for making this rice casserole recipe as I had cheese and corn too which I was wanting to include in rice casserole.This tastes soo good, sure a treat from our usual rice sambar combo, amma enjoyed it so much.

Rice casserole recipe a delicious way to use leftover rice
- 1 cup cooked basmati rice
- 1/3 cup onion (finely chopped)
- 1/3 cup tomatoes (finely chopped)
- 1 tbsp garlic crushed
- 1/4 cup capsicum (finely chopped)
- 1/2 cup boiled corn
- 1 tsp tomato ketchup
- 1/2 cup grated mozzarella cheese
- salt to taste
Spice powders:
- 1/2 tsp mixed herbs
- 1 tsp pizza seasoning
- 1/2 tsp chilli powder

To a pan add olive oil – add garlic and onion saute till transparent.Then add tomatoes and capsicum.Saute until mushy and it shrinks.

Add all the spice powders along with salt.Saute for 2 mins.

Add boiled corn.Give a quick toss.Finally add tomato ketchup.

Give a quick mix and switch off.Reserve a little of the mixture as topping. To the remaining add leftover rice and mix well.Preheat oven at 180 deg C for 10 mins.

Grease a baking dish with butter.Spoon the rice mixture.Pat it well.

Now add the remaining mixture as topping.Sprinkle with mozzarella cheese.Bake in preheated oven at 180 deg C for 10 mins.

Serve hot!
- Instead of basmati rice you can use regular rice too.
- The flavorings are purely your choice, you can even use our indian masala powders.If you don’t have pizza seasoning add oregano and mixed herbs with ketchup.
