Mango Juice

Mango Juice is a juicy, yummy drink made by blending mangoes with sugar and water. Mango Juice is a great choice of drink to relish with family or in get-together. Mango Juice Recipe is explained in this recipe with step by step pictures and video.

Mango Juice Recipe

Mango Juice tastes so yummy and juicy especially when it is homemade. This Mango Juice Recipe is one of my favorites as it is easy to make also uses only available ingredients in your pantry.

About Mango Juice

I used to love Mango Juice from Pazhamudhir Nilayam a local vegetable fruit vendor shop but until I started making homemade fresh Mango Juice. Mangoes are in season so make best use of it by making fresh and juicy mango juice.

Mangoes tend to be sometimes not taste sweet when consumed as it is. So in such situations Mango Milkshake and Mango Juice will be my first choice. You can make Mango Lassi. Check out Mango Frooti here.

Why Homemade Mango Juice?

Homemade Mango Juice is best as it is juicy, sweet and without added preservatives. In shops they make mango juice and store it for a week atleast with loaded sugar and preservatives, so they don’t taste fresh. But Homemade Mango Juice is always prepared fresh and tastes best when consumed fresh. Also you have the liberty to adjust the consistency of mango juice, also choose the variety of mangoes as per your preference for making Mango Juice.

Though Alphonso Mangoes tastes best for Mango Juice however you can use Banganapalli or even Neelam mangoes as per your liking.

Mango Juice 2 Ways

  • Mango Juice (Classic Version) – The Classic Mango Juice uses just mangoesm, sugar and water without any other additions with just the purest taste of mangoes with little sugar. I used alphoso mangoes for this.
  • Mango Juice (With Sabja Seeds) – This version tastes the same as the Classic Mango Juice with the addition of sabja seeds. Sabja Seeds has no taste by itself but gives the juice a texture. Sabja Seeds are great as a natural body coolant so helps to maintain a balance while adding to Mango Juice. I used banganapalli mangoes for this.

Mangoes – How to Store?

As we all know Mangoes are seasonal and tastes best only when it is in season. But Mangoes when preserved can be enjoyed throughout the year. Mangoes can be stored in fridge for a short period of time say for about 2 weeks. But if you want to store it over a long period then you can follow any one method given below :

  • Cut mangoes into cubes, transfer to a clean zip loack bag or a dry container and freeze it. This can be stored and used for around 6 months.
  • Puree mangoes without adding water, then transfer to a tall container and alternate it with sugar layer like first a layer of mango pulp then add a tbsp sugar then mango layer likewise. This can be preserved for about a year.
  • Puree mangoes without adding water pour it in icecube trays and freeze it. This can be stored and used for around 6 months.

Mango Juice Ingredients

  • Mangoes : Mangoes are seasonal and are available commonly in summer in India. Mangoes are to be enjoyed in the season as they are the tastier ones. Alphonso is the recommended variety for tasty, sweet & colourful juices.
  • Sweetner : I have used regular white sugar for this recipe. You can try with honey, brown sugar or cane sugar.
  • Flavours : I did not add any flavouring for Mango Juice as it tastes best when had as such but you can add few mint leaves or cardamom while blending.

Mango Juice with Sabja Seeds is a refreshing juice for summer.Homemade mango juice with basil seeds and lemon tangy and yummy perfect after or before a meal.

Ingredients

How to make Mango Juice with Sabja Seeds

1.To a mixer jar – add 1 cup chopped mangoes.

2.Add 1 tbsp sugar. I used brown sugar but you can use white sugar too.

3.Add 1 cup water.

4.Blend well until smooth. Set aside.

5.Transfer the juice to a container. Add 1/2 tsp lemon juice.

6. To a bowl add sabja seeds.

7.Add water till immersing level.Set aside for 5 mins until all the seeds are bloomed well.

8.All bloomed well, sabja seeds are ready to use.

9.Now add this to mango juice.

10.Mix well and chill it until serving time. While serving add few icecubes, then pour mango sabja juice and serve.

Hands down alphoso mangoes are best for making mango juice be it the color, taste or texture. However you can use Neelam, Banganapalli mango varieties too.

3. Can I avoid adding sugar?

Yes you can skip sugar if the mangoes are really sweet. Adding sweetner is purely your preference also depends on the sweetness of mangoes.

4.I don’t have sabja seeds.What can I replace it with?

You can replace it with chia seeds or tender coconut pieces for a biting texture while drinking the juice.

Paal Ice or Milk Ice or Milk Popsicles is one of the most popular treat during summer. Paal Ice and Rosemilk Ice are my favorites since my childhood days and it always brings back fond memories of summer spend in my hometown.

About Paal Ice

Paal Ice – Have you tasted Paal Ice/ Milk Ice?! It is one among my favorites. Paal Ice is made using milk as main ingredient not really sure what else they add but sure tasted delicious. I have seen and tasted Paal Ice during my school days where we get these from small thallu vandi(small cart) vendors, they used ring a special bell stopping at each house which would alarm all kids to come out to buy ice pops.

After that I haven’t seen or tasted paal ice not really sure whether paal ice now exists .Also now I am scared to expose mittu to these street selling ice pops, as I am not confident about the water they use. So thought to try paal ice for her at home.Paal ice which I tasted was creamy but am sure they would not have used any expensive and rich ingredients like condensed milk etc. Having been successful with cornflour to get the creamy texture, I decided to use cornflour and the end result was great.

I hope regular readers know about my popsicle mania so I am enjoying making different popsicle varieties this summer and mittu is enjoying eating them. Of all the popsicles tried so far for this summer, this paal ice and rose milk ice tops the list.

Paal Ice Ingredients

Paal Ice is made using 4 basic ingredients

  • Milk – Use full fat cream milk for best results. You can use cows milk or even packet milk but make sure its not thin. Always boil and use.
  • Sugar – I have used white sugar as in shops but you can replace it with cane sugar or honey or brown sugar etc.
  • Cornflour – Cornflour is used to make the popsicles creamy.
  • Flavouring – Usually a mild flavouring of cardamom is used but in some shops only the milk flavour dominates. So its your wish whether to skip it or not.

Paal Ice | Milk Popsicles

Ingredients

  • 2 cups milk
  • 1/4 cup sugar
  • 2 tsp cornflour
  • 1/4 tsp cardamom powder optional

Flavouring – Choose only one

Instructions

  • To a thick bottomed sauce pan – add 2 cups full fat milk.
  • Let it come to a rolling boil.
  • Simmer for 3-5 mins.
  • Add 1/4 cup sugar to it.
  • Add 2 tsp cornflour.
  • Whisk well so that there are no lumps. Keep stirring continuously.
  • Keep stirring, else the mixture will become thick and lumpy.
  • Keep stirring and cooking for 2-3 mins until it becomes slightly thick and creamy. No need to check for any coating on the laddle.
  • Now add 1/4 tsp cardamom powder. Give a quick mix and Switch off. You can choose to change the flavouring if using vanilla essence use 1/4 tsp or any flavouring of your choice. But make sure to use mild flavouring so that the milk taste is still there.
  • Close with lid and set aside to cool down. Cover it only partially so that steamed water does not fall into the milk and make the mixture runny.
  • Once the mixture is warm pour into popsicle moulds.
  • Either close with lid or close it with aluminium foil.
  • Make a tiny slit using a knife.
  • Insert icecream stick.
  • Repeat to finish.
  • Place it inside the freezer. Freeze for atleast 8 hrs or overnight. I usually freeze it overnight.
  • This is how it looks the next day. Freezing done now time to demould.
  • Now remove the foil.
  • Dip the mould in water.
  • Gently oull out the popsicles.
  • Paal Ice ready.
  • Enjoy!

  • The flavouring is upto your choice. You can add either vanilla essence or cardamom powder or 2 tbsp coconut scrappings or saffron or rose essence or honey etc.
  • You can add 2 tbsp milk powder to get a more unique taste and flavour.

Serving & Storage Suggestion

Serve it immediately once you demould. You can freeze the popsicles for upto 2-3 days. Serve it as such or drizzle chocolate syrup and serve. You can even drizzle honey if you prefer. But we love it as such to enjoy the full flavour of milk.
