Cookies are my weekness. Specially if it has chocolate chips and m&m’s. These cookies are packed with all those goodness and is totally delicious.
Are you ready for the best rainbow cookies recipe? I’ve been making these cookies for years now and they are ALWAYS a hit. In fact, I’m making a batch today for some neighbour gifts!
How To Make The Best Rainbow Cookies

Preheat oven to 350 degrees F. and line a large baking sheet with a silpat liner or parchment paper.

In a large mixing bowl cream your butter and sugars until well combined. Pour in your egg and vanilla mixing to combine.

Add your flour, baking soda and salt, stirring to combine.

Add chips and m and m’s stirring to combine.

With a medium cookie scoop, place dough 1 inch apart from each other.

Bake for 10-12 minutes until cooked through.

Let cool on cookie sheet for 10 minutes before transferring to cooling rack.

How do I make my cookies softer?
Use more brown sugar. Brown sugar is hygroscopic, which means it takes in and retains moisture, more so than granulated sugar. Never oven bake cookies.
The dough will keep in the fridge for 3-4 days, or in the freezer for 3 months. Form into a 2-3-inch log and tightly wrap in two or three layers of plastic, or in one layer inside a freezer bag. Whenever you want, warm from the oven cookies, just slice into ½-inch discs and bake until browned and fragrant.

- ½ cup unsalted butter (100 grams)
- ½ cup light brown sugar (100 grams)
- ⅓ cup granulated sugar (60 grams)
- 1 large egg
- 1 teaspoons vanilla
- 1½ cups all-purpose flour (180 grams)
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup chocolate chips
- 1 cup gems , plus more for tops if desired
- Preheat oven to 190 degree C.
- Cream Butter with both sugar and vanilla till creamy.
- Add in egg and mix well.
- Add in flour, baking soda, salt and mix well.
- Add in chocolate chips and gems.
- Scoop this using a ice cream scoop into a baking tray.
- Top with gems or m&m's, flatten this lightly.
- Bake this for 10 mins. Remove this from oven and cool for 10 mins.
- Serve warm.
2)Cookies will look soft when removing from oven. As it cools it gets harder.
3)Store cookies in an air tight container.
