Aamras is a popular Indian dessert made from juicy, sweet mangoes. Aamras is a sweet sidedish that is enjoyed during mango season. Aamras is a great refreshment as a dessert or can be relished with poori. It is a must try at home during mango season. Aamras Recipe is explained here with step by step pictures and video.

Aamras is nothing but sweetened mango pulp with mild flavourings from saffron and cardamom. As the mango season is going to end, I wanted to try this easy and yummy dish. It can be served as dessert or as a sidedish for Poori.

About Aamras

‘Aam’ means Mango and ‘Ras’ means juice so aamras is nothing but mango juice. Traditional aamras is served chilled with poori but can be served as a standalone dessert too. Aamras Puri is a great popular combination.

Choose ripe sweet juicy mangoes for this recipe. I used alphonso mangoes and it was so juicy and yum.You can use neelam, senthooram or such varieties that are juicy and not fibrous for making it.

In India, Aamras is commonly prepared during festivals like Holi and Navratri. It is a popular and favourite dessert especially in regions where mangoes are abundant.

Aamras Ingredients

  • Mangoes – Choose ripe, sweet juicy less fibrous mangoes. Alphonso is the recommended variety for this recipe. However you can use senthooram, neelam, banganapalli varieties too.
  • Sugar – You can use regular white sugar or cane sugar or even brown sugar. But cane sugar or brown sugar changes the color.
  • Flavourings – I have used saffron and cardamom.
  • Garnish – You can either add chopped nuts or just few strands saffron for garnish as I have did.

Ingredients

  • 2 medium sized mangoes
  • 2 tbsp sugar
  • 1 small cardamom
  • around 10 strands saffron

Instructions

  • To a mixer jar add 2 mangoes just the pulp – You can even chop them roughly and add it.
  • Add 2 tbsp sugar and around 10 strands saffron strands.
  • Peel the cardamom skin, discard it and add the seeds alone.
  • Grind it to a fine puree.
  • Delicious thick aamras is ready!
  • Aamras is ready!

Notes

  • You can add 2 tbsp boiled milk while grinding. Adding milk while blending is optional , its purely your preference.
  • As we are adding sugar, it will thin the puree so no need to add water.
  • Adjust sugar quantity according to the sweetness of the mangoes. Add more sugar if the mangoes are tangy.
  • If you prefer you can add any nuts of your choice but traditionaly it is served just plain.
  • Choose mangoes that are juicy and not fibrous.

Aamras Recipe Step by Step

Serving & Storage Suggestion

Enjoy Aamras with poori or as such without any garnish , it tastes great that way too. If you prefer you can garnish with chopped nuts and serve.

This keeps well for 1 day in room temperature and for 3 days if refrigerated but I recommend consuming it fresh to enjoy the best taste.
