Fied Rice is popularly made here with the Indianised version of Chinese cuisine and is a very popular fast food. Veg Fried Rice is a great choice in a grand lunch menu or for special occasions.

About Fried Rice

Veg Fried Rice is the most popular order in hotels and restaurants. Though the making of Fried Rice in hotels and restaurants differs both taste good in their own way. But the special smoky taste for fried rice comes by stir frying vegetables along with rice and sauces in high flame in a large wok – Yes the wok plays an important role in cooking fried rice. Chinese food is done in flash cooking so if all the ingredients are ready the dish gets done in no time.

Hands down this is one of our family favourites and most demanded dish at home. Though the stove at home does differ from the high range stoves and temperatures used in hotels, still you can make a delicious Fried Rice Recipe at home with easily available ingredients and equipments.

I would say this Fried Rice Recipe is healthy and tasty to be served for all ages. I do not add Ajinomotto as in hotels considering health reasons – the added benefit of plus and minus depending on our choices at the comfort of our home. Still this Fried Rice tastes soo good and the smokey flavour comes from stir frying and tossing the mix in high flame. In authentic Fried Rice usually soya sauce is not added but I add it for the umami flavour. When I pack for kids lunch box I usually skip all the sauces just rice mixed with vegetables with lots of garlic and pepper and they love it.

Fried Rice needs no sidedishes as its a complete meal by itself. But if you prefer to serve with sidedishes then serve it along with any manchurian sauce. Gobi Manchurian or Baby Corn Manchurian is the best side dish for fried rice

Veg Fried Rice Ingredients

  • Rice – You can use long grained basmati rice, regular basmati rice or even jasmine rice.
  • Vegetables – Veggies is absolutely your choice you can add carrots, spring onion, mushrooms, beans, capsicum, cabbage etc.
  • Sauces – Soya sauce is the main sauce used here. You can even add chilli sauce if you prefer.
  • Flavourings – Garlic and pepper adds more flavour to this dish.

Ingredients

  • 1 cup basmati rice
  • 1/2 cup carrot finely chopped
  • 1/2 cup capsicum
  • 3/4 cup cabbage
  • 1/4 cup beans finely chopped
  • 1/4 cup spring onions – green part finely chopped
  • 1 tbsp spring onions – white part finely chopped
  • 1 tbsp garlic finely chopped
  • 1 tsp soya sauce
  • 2 tsp pepper powder
  • 3 tbsp oil
  • salt to taste
  • water as needed

Instructions

  • Soak 1 cup basmati rice in water for 15 mins.
  • Set aside undisturbed. Soaking helps in giving grain seperated and also soft fluffy rice.
  • Rinse it well until starch water is washed off. Drain water completely.
  • To a sauce pan add 4 cups water bring it a boil add required salt.
  • Add drained rice to it.
  • Give a quick mix and cook in low medium flame for 6-8 mins.
  • Rice should be aldente soft but should have a bite. Rice should be soft but not mushy – only when pressed hard it should be mashed that is the right stage. Immediately switch off.
  • Transfer to a colander drain water completely.
  • Spread it over a plate to cool down. Set aside.
  • Now to a wok – add 2 tbsp oil – add 1 tbsp garlic finely chopped and 1 tbsp spring onion white part.
  • Saute for a minute.
  • Add 1/2 cup carrot finely chopped, 1/2 cup capsicum, 3/4 cup cabbage shredded and 1/4 cup beans thinly sliced.
  • Saute for 2 mins in high flame, keep stirring until the veggies start to shrink.
  • Add salt to taste, 1 tsp vinegar,1 tsp soya sauce and 1 tsp pepper powder.
  • Give a quick stir.
  • Add cooked rice.
  • Add 1/2 tsp crushed pepper, 1/4 cup spring onion green part.
  • Give a quick mix. Toss the rice in high flame for 2 mins and switch off.
  • Tasty Veg Fried Rice is ready!

Notes

  • Don’t skip spring onions as gives a good amount of chinese flavour to the fried rice.
  • Usually they add only spring onion and skip raw but if you like you can add slived onion too. Add it after garlic is sauted.
  • Chopping the veggies very fine helps in cooking faster. Sauteing the veggies in high flame gives a nice smoky flavour and also retains its crunchiness without the raw smell.
  • I soaked the basmati rice for 15 mins then cooked in stove top. You can even pressure cook with 1:1.5 ratio(rice:water) for 2 whistles in medium low flame.
  • Make sure to fluff the rice and spread it with little olive oil to make the grains separate. Allow it to rest atleast for 30 mins before mixing.
  • Don’t add more soya sauce than mentioned amount else your fried rice color will be on the darker side also soya sauce will be over powerful.

Veg Fried Rice Recipe Step by Step

Expert Tips

You can serve Fried Rice with any manchurian sauce or gobi / baby corn manchurian etc. Any chilli dishes will go well with fried rice too. Chilli Paneer or Chilli Baby Corn is the best combo for Fried Rice.

Variations

  • You can add other sauces like 1 tsp green chilli sauce or 1 tsp red chilli sauce if you like the flavour.
  • You can use jasmine rice or seeraga samba rice instead of basmati or long grained rice.

Basmati rice is best for fried rice. Aged long grained basmati rice is perfect for any fried rice. You can use jasmine rice too if you like the flavour.

2.I do not have a wok. Can I cook fried rice?

Yes definitely! You can use a iron kadai / skillet to make fried rice. I always recommend iron cookwares to make fried rice.

3.Which oil is best for fried rice?

I use normal cooking oil for making fried rice. Olive oil is also good, but make sure to use extra virgin olive oil as it has low smoking point.
