Badam Milk is a creamy, yummy drink made by simmering milk with almond paste and flavoured with saffron. Badam Milk is a great choice and alternate to the packed health drinks, tea  / coffee and carbonated drinks. Badam Milk can be relished hot or chilled and very healthy too!

Badam Milk is the most nutritious drink that can be consumed by all. Badam Milk can be had cold or hot as per your preference.

About Badam Milk

Badam Milk is one of the healthiest ways to include almonds in our regular diet. I always make Homemade Badam Milk Powder to make Instant Badam Milk but this Badam Milk is a traditional one made by soaking almonds, making a powder and boiling it with milk, tastes delicious too. Badam milk is called as Badam Paal in tamil and Badam Doodh in hindi.

Soaking almonds or badams makes it easy to peel the skin. Badam or Almonds are rich in Vitamin E so including them in daily diet is good. You can even soak 2-3 almonds in water overnight then next day strain water, peel the skin and you can consume it. I love saffron and cardamom flavour the best when paired up with badam so I recommend adding it.

Badam Kheer & Badam Milk

Badam Kheer is often misunderstood as Badam Milk as both of them are different in texture and taste. Badam Kheer is thicker & creamier than Badam milk. To make it simple Badam Milk is a milder version of Badam Kheer.

Badam Milk Ingredients

  • Badam : Choose Badam from fast moving nuts & spices / grocery stores for good quality ones.. If you can smell or taste Badam at store, they should not smell or taste chemical even if it subtle. Badam should not be shrinked or too small.
  • Milk : Use full fat milk for best creamy badam milk.
  • Saffron, Cardamom : Use genuine branded saffron strands as there are lot of duplicate ones. Saffron gets the flavours & beautiful color to the kheer. Kashmiri saffron is one of the best in the world and available in lots in India. Cardamom is added for flavours.
  • Sugar : I added regular white sugar for this recipe. You can replace it with cane sugar too.

Ingredients

  • 20 nos badam (almonds)
  • 2 cups milk
  • 2 tbsp sugar
  • 10-12 strands saffron
  • 2 nos cardamom

Instructions

  • Soak almonds in hot water for 10mins. Peel off the skin from them.
  • Transfer it to mixer jar. Add 1/4 cup milk.
  • Add saffron stands. Pulse it well so that it forms a runny liquid.
  • Take remaining 3/4 cup milk in a sauce pan. Boil it for few mins.
  • Add kesar badam milk mixture.
  • Let it boil, add sugar and cook for 2mins add cardamom powder, give a quick stir and switch off.
  • If you are wishing to have it hot, serve immediately. Else if you are like me who prefers to have it chilled then refrigerate for 30mins then serve.
  • Serve Badam Milk chilled with a garnish of saffron strands and finely chopped almonds .

Notes

  • Use only fresh milk.
  • While grinding almonds do not add raw milk as there are chances it might curdle when added to boiling milk.
  • Grind almonds with milk until smooth without any lumps. You can even add sugar along with almonds, milk while grinding.
  • Make sure to simmer for few mins once saffron is added for the milk to absorb the flavours well.
  • Also do not boil for more time after milk badam paste is added.

Badam Milk Recipe Step by Step

1.Soak 20 nos almonds in hot water for 10 mins.

2.Peel off the skin from them. Just press and it easily comes off. Repeat to finish.

3.Now skin peeled and ready.Set aside.

4.Add 2 cups of milk to a sauce pan and boil it until it comes to a rolling boil.

6.Give a quick mix.

7.Simmer for 2 mins.

8.Reserve 1/4 cup milk for grinding almond to a paste.

9.To a mixer jar add deskinned almonds along with reserved 1/4 cup milk and 2 nos cardamom(remove skin and add it).

10.Grind it to a fine paste. If you like bits of badam while drinking then grind it slightly coarse.

11.It should be a smooth fine paste.Set aside.

12.Now around 10-12 strands of saffron to boiling milk.

13.Add 2 tbsp sugar. Adjust according to your preference.

14.Give a quick mix and simmer for 2 mins until the flavour of saffron infuses in the milk well.

15.Now add badam paste.

16.Scrap and add completely.

17.Mix and let it boil for a minute then switch off. There is no need to let it boil vigorously.

Hot badam milk ready to serve. Enjoy the cup of badam milk hot or cold as per your liking.

  • If you wish to skip cardamom then add just saffron.
  • You can even add 2 drops of rose essence or almond essence instead of cardamom powder.

Storage & Serving Suggestion

Badam Milk should be consumed fresh. But incase if you want to store the left overs then refrigerate it. It keeps well in room temperature for about a day and for 2 days in fridge.

Serve with chopped or silvered almonds as garnish or garnish with saffron and serve. You can serve Badam Milk either hot or cold.
