Avocado grilled cheese with smooth, creamy avocado mash along with cheese in between perfectly golden toasted bread.
You can name it avocado cheese toast as well.
Make it for a Sunday special or even for lunch box, it works.
This stuffing was inspired by my Avocado crema on this site, after which I started loving avocado and introduced it to Aj next to guacamole.

Simple ingredients I had to prepare this quick avocado toast.
- Avocado
- Bread slices (See substitutions for best choice of bread)
- Cheese slices
- Lime
- Green chilli
- Coriander leaves
- Butter

Instructions
1. Run knife around the seed and twist open avocado firstly. Take out the seed.
2. Scoop the pulp and chop it roughly. Then place in a mixer/ food processor.
3. Add coriander leaves, green chilli, lime juice, little salt on top of it.
4. Blend smoothly.
5. Take bread slices. Place cheese slice over it and spread the ground avocado.
6. Furthermore, place another cheese slice on top of it.
7. Cover it with a bread slice on top.
8. Heat a cast iron pan preferably and grease with butter (1 tsp)
9. Place the avocado sandwich over it.
10. Cook in low to medium flame covered.
11. Once golden, flip and press gently for even browning. I added another teaspoon of butter as it helps even golden browning and crispiness.
Finally take out when both sides are crispy and golden.
Cut into two to serve. Use a serrated knife and slice gently without making the stuffing ooze out.
Serve with a nice smoothie or fruit juice for a filling breakfast.
Substitutions
- Coriander - instead of coriander, you can use parsley, basil or mixed herbs
- Bread - For crisp and crunchy bite, a rustic bread is recommended. I used milk bread. But it's just the opposite. You can use whole wheat bread, multi grain bread or use gluten free bread if needed instead of white bread to make this gluten free.
- Vegan - the dairy butter and cheese can be replaced with a vegan butter and cheese slice to make this vegan.
- Cheese slices - Use Cheddar cheese slices (sharp or medium) for best results. My other recommendations are Monterey, Gruyere, Gouda, Havarti. I made with regular sandwich cheese slices.

Variations
- Spicy - add chili pepper flakes sprinkled over the avocado spread.
- Deluxe - add garlic butter for a twist.
- Kid friendly - Cut the bread slices with large cookie cutter to their favorite shape. You can serve with some potato chips as well.

Top tip
Use rustic bread slices if you want crispier results even after cooling down.
Gourmet cheese slices works well though you can make it with regular cheese slices.
