- Baby potato - Small potatoes works best for this recipe both taste wise as well as texture wise. It easy to work with.
- Mayonnaise - You can make your own or use store bought too.
- Cajun seasoning - Star ingredient of the recipe, you can make easily at home and store or buy readymade one.

What is Cajun potato?
Crispy baked/ fried potatoes with a special Cajun mix which has easily available ingredients that probably sits in your pantry already!
Since this recipe is all about restaurant style, I have mixed this spice blend in mayo to make a Cajun spiced sauce.
You can either coat the crispy potatoes in the sauce just before serving or, serve as a dip or pour over the potatoes arranged in the plate and serve (just like in this post).
So instead of ordering cajun potatoes online or at the restaurant, you can make your own at home easily.

Can we make Cajun potatoes without mayonnaise?
Yes. Though this is the close to restaurant one, we can always tweak the recipe by using sour cream to prepare the sauce to make creamy cajun potatoes.
Can I make cajun potatoes in Air fryer?
Yes you can, Pre-heat air fryer for 20 mins at 400F. Bake for 15-20 mins.

🧂 Homemade Cajun seasoning
- 2 tablespoon Garlic powder
- 1 tablespoon Onion powder
- 2 teaspoon Oregano
- 2 teaspoon Thyme
- 1 tablespoon Paprika
- 2 teaspoon Chilli flakes
- 1 teaspoon Pepper
Method
1. Take all the spices in a mixing bowl firstly.
2. Secondly, using a whisk, mix well.
3. Mix furthermore for an even blend.
4. Finally store in an air tight container in fridge. It stays good for an year. If you want you can even mix salt an keep but I prefer to keep without salt.

How to cook baby potatoes
You can cook small potatoes in 2 different ways:
- Boiling - In a large sauce pot, fill tap water generous enough to cover the cleaned baby potatoes. Add lots of sea salt and bring to boil. Takes about 15 to 20 minutes for fork tender cooked potatoes. Do not over cook.
- Pressure cooking
1. Firstly, I pressure cooked baby potatoes for a whistle with water to immerse the potatoes completely and lots of salt.
2. Let pressure release naturally. Once done, drain from water immediately and allow to cool down completely.
3. Once cool and dry, arrange it over a chopping board and smash gently using back of a glass. It should be flat bottomed.
Make sure not to let it break, it should hold it's shape.
4. Take them in a mixing bowl. Add rice flour and corn flour.
5. Mix very gently without breaking to coat it.
You can deep fry these or bake it.
Deep frying:
1. Heat oil in a pan and once hot add few per batch and fry until crisp and golden.
2. Drain over paper towel. If serving later, you can also refry for extra crispiness.
Baked version cajun potatoes
1. Pre heat oven at 200 deg C for 15 minutes firstly or until the temperature is reached.
2. Line a baking tray with baking paper secondly. Arrange the smashed potatoes as single layer.
Hint: Drizzle a bit of oil or melt butter over the potatoes for more tasty results
3. Bake for 20 minutes without disturbing it. After that, change the position of tray.
Furthermore bake for 10-20 minutes (until crisp).
Sauce preparation
1. Take mayonnaise firstly in a mixing bowl.
2. Secondly, add Cajun spice. Adjust seasoning as per your taste.
3. Add milk to dilute it to a thick and creamy sauce that flows.
Serving
1. Arrange the crispy smashed potatoes in a serving plate firstly.
2. Pour the creamy Cajun sauce over it to cover it. Or you can just gently coat to mix it.
3. Optionally you can serve with chopped raw onion over it and some cajun spice/ chilli flakes/ paprika sprinkled over it.
Consume as soon as possible.
📖 Variations
- Spicy - add cayenne pepper to imbue heat into the dish.
- Creamy - Add a dash of cooking cream in place of milk to dilute. Cooking cream has less fat percentage comparatively than whipping cream or regular thick cream.

You can finish until frying / roasting and then re fry/ roast while serving. It is better to smash

- Do not overcook potatoes. Otherwise it will retain water.
- Also do not smash when hot. Let it air dry for a while until cold.
