I have added masala that we use in our regular every day cooking in this recipe. Garam Masala powder, Red chilli powder, Turmeric powder, & Ginger Garlic paste all in formulated quantities for a healthy & tasty Masala Oats.

Steel cut Oats – Rolled Oats – Quick Oats – Which Oats have I got for Masala Oats?

Steel Cut Oats are the coarse unprocessed oats that are cut using steel blades after removing the husk / hull. They are grainy and takes time (15 to 20 minutes) to cook or the oats has to be soaked and cooked just like our rice.

Rolled Oats are oats that have gone through steaming & flattening process, soft in texture and could be cooked in 3-5 minutes.

Quick Oats are further processed oats to decrease cooking time. The Oats that we get from store in India are usually quick oats or rolled oats and needs a cooking time of 3-5 minutes based on the recipe.  The type of oats will be clearly printed on the cover of the oats pack.

Is Masala Oats a Porridge or Kichadi?

Masala Oats can be cooked like a porridge or a kichadi consistency depending on the amount of water added and cooking time. The recipe published here is for porridge consistency. If you wish to make in kichadi consistency add little less water, do not mash the veggies and cook for extra 2-3 minutes. Also if you allow the masala oats to cool, it will get thickened to kichadi consistency. However the taste is best when consumed hot.

Masala Oats – A money saver recipe

We get only 1/2 Kg of Masala Oats for the price of 1 Kg regular Oats. With the veggies and masala powder available at home, making masala oats with regular oats at home is a good money saver and a healthy one when compared to the packed Masala Oats.

The veggies in the packed versions of Masala Oats roughly translates to 25gms in ½ kg pack while it is about 200 gms of veggies for 1/2kg per this recipe. So make a smart choice!

Instant Pot cooking of Masala Oats

Use this method if you are having steel cut oats and wish to cook it in Instant Pot

  • Saute onions in the instant pot by selecting saute mode.
  • Add spices and mix well.
  • Add veggies of your choice, steel cut oats and 2.5 cups water.
  • Now cook in high pressure for 7-8 minutes.
  • Let the pressure release naturally.
  • Open the lid, garnish with coriander leaves and enjoy hot masala oats!

Masala Oats Ingredients

  • Oats : If the oats is rolled or quick cooking type this recipe can be followed as is. If you are using steel cut oats, soak them for an hour before cooking and cook for 10-15 minutes in the prescribed recipe or you can follow Instant Pot method.
  • Veggies : I have used carrots, peas & tomato for this recipe. Veggies are your choice – you can add or discount based on your preferences & inventory. Beans, broccoli, cauliflower, beet are other veg choices.
  • Tempering : Cumin seeds is added for tempering. I usually temper it in cooking oil itself but if you wish you make it more flavouring by tempering it in ghee.
  • Garnish : Add a lavish sprinkle of coriander leaves at the end for a more falvourful masala oats.

Masala oats is a quick porridge with quick cooking oats and vegetables. Masala oats recipe with step by step pictures.

Ingredients

To temper

  • 2 tsp oil
  • 1/2 tsp cumin seeds

Instructions

  • In a non stick pan add onions and dry roast it until it shrinks, then add oats and roast it until nice aroma rises.
  • Meanwhile pressure cook the vegetables seperately until soft and slightly mushy(I cooked for 2 whistles).Now add water, cooked vegetables, red chilli, turmeric, garam masala powder and required salt to the oats. Let it cook in medium flame for 3mins until oats becomes soft.Add more water if required.
  • Allow it to boil for a while, then use a laddle/ masher and mash it well(it depends on how you want your veggies to be) Cook for 2more mins until it reaches the porridge consistency. Then add chopped coriander leaves, pepper powder and switch off .
  • Serve hot with raw onions and coriander leaves garnished and pepper powder sprinkled.

Notes

  • You can use vegetables of your choice. Also if you like the veggies in pieces just mash it roughly.
  • Adjust water according to the oats variety. If you want you can add curd / buttermilk, mix it while serving.
  • Adding the vegetables and spice powders even before the oats is cooked helps in blending the flavours well. You can also pressure cook the vegetables, oats together with the spice powders.
  • Amma usually sautes onion and tomato well and then add it to the other other ingredients. You can try this too as tomatoes give a nice flavour.

How to make Masala Oats

1.Heat oil in a pan – when it is heated add cumin seeds let it splutter.

2.Add onion, tomato and ginger garlic paste.

3.Saute until it shrinks and tomatoes turn mushy.

4.Now add vegetables I added carrot and frozen peas. Add turmeric powder, red chilli powder, coriander powder and garam masala powder along with required salt.

5.Give a quick saute. Saute for 2 mins.

6.Add water, give a quick mix .

7.Let it come to a boil.

8.Cook covered until the veggies are cooked soft.

9.Now add oats after checking the vegetables(if they are cooked soft).

12.Starts to boil,keep cooking.

13.Turns thick more like porridge consistency.

Serving & Storage Suggestions

Masala oats does not need accompaniment as it is a wholesome complete meal. It is ideal for breakfast, dinner and evening time for kids back from school. Masala Oats is best tasty when hot, so savour it immediately after cooking.

If there are leftovers, refrigerate it or if it had turned cold, just sprinkle water and reheat in tawa or in microwave.
