Cardamom powder is a versatile spice used in many Indian dishes, that has a sweet as well as fragrant aroma. Elaichi powder is made by grinding cardamom seeds with skin into a fine powder to add especially in sweets, desserts, flavored drinks and rice dishes.
Cardamom powder comes handy whenever you prepare desserts, sweets as well as savory dishes like curries, pulao, so that you can add it readily to the dishes.

Use a good quality green cardamom, from a reliable source.
Instructions
To make cardamom powder also known as elaichi powder (in Hindi) or elakkai podi (in Tamil) at home, follow these simple steps below :
1. Firstly, measure cardamom and place it in a spice grinder/ coffee grinder. After that, top it with 3 tablespoons of sugar.
2. Then, grind it in high speed for 40 seconds and wipe the sides if needed.
3. Repeat the same 2 more times (total 2 minutes) or until it's fine powder.
4. Then, if needed, sieve using a metal strainer to get rid of large speckles of skin.
5. Finally, sore in an airtight container and keep refrigerated.
Cardamom powder method 2
1. Firstly, heat a pan and add cardamom to it.
2. After that, roast in low heat. It will start to become light as well as puffy.
3. This will take 4 to 5 minutes. Remove in a plate and cool down completely.
4. After that, place it in a spice blender/ coffee grinder and grind in high speed. It took 2 minutes for this grinding 3 times 40 seconds each or until continue until finely powdered.
Finally store in an airtight container and keep refrigerated.
Uses
Whenever I prepare sweets, payasam, kheer, tea etc, I this comes handy, you need not rush and crush each time in hurry.

How to grind small batches
Equipment can have a big impact on how a this turns out. A mighty blender is must for finest results. Otherwise, you will not get satisfactory results.
In my first method, I have used granulated sugar to get the cardamom powdered easily.
In the second method, roasting helps in making the skin dry and crisp so that it is easily powdered.
My MIL always roasts the cardamom in ghee and crushes, so that it is easily powdered.
She uses rolling pin or pestle to quickly crush as it is needed for a dish.
Some people does not like cardamom seeds/ skin coming in mouth while enjoying their sweets and desserts.
That includes Vj, he is okay with cardamom as long as it doesn't comes in his mouth.
Storage
I keep the cardamom powder refrigerated, so that it retains flavor as well as for longer shelf life.
Top tip
- Never skip or reduce the sugar quantity in first method. It will not get powdered and long thin fibers only will be there.
- Do not over roast the cardamom or use high flame while roasting, it may affect the flavor.
FAQ
You can, if you have the patience to take out the seeds in it. My mom says, the skin is equally fragrant as the seeds.
