Strawberry Frozen Yogurt Recipe

Strawberry frozen yogurt is a frozen dessert made with fresh strawberries and yogurt as main ingredients. This is a simple recipe with just 3 main ingredients for refreshing fruity treat on hot summer days.

Aj doesn't like to eat his yogurt and I had hard time convincing him to consume yogurt. Then he started to eat greek style yogurt. I try my best to avoid the one with artificial color or flavors.

This one is a great option to make him consume yogurt in summer with fresh ingredients. Hope this will be useful to few of you.

Ingredients

Here are the ingredients used in this frozen yogurt. See recipe card for quantities.

  • Strawberry - I had some strawberries frozen that I got earlier. So used up them.
  • Yogurt - Greek style yogurt works best for this. You can also use
  • Sweetener - You can use your own choice, sugar, honey. I used condensed milk as I had stock and it gives good richness and balance.

Instructions

Let's see how to make this strawberry frozen yogurt.

  1. Firstly, I wash and soak the strawberries in water with some cooking soda. Then I froze it for better texture of the frozen yogurt.

2. Place frozen strawberries in a blender and top it with condensed milk

3. After that, add the Greek yogurt.

4. Blend well until it is smooth.

5. Then pour it into a freeze safe air tight container.

5. Wait for 10 hours or until it is frozen.

11. Once done, scoop and serve.

If the frozen yogurt is not set properly, give more freezing time. Or in case it is frozen like a rock, leave in counter top for 30 mins before serving.

Substitutions

  • Strawberry - Fresh or frozen, you can use anything that is available.
  • Yogurt - In case you want to use the regular yogurt or Indian curd, you can hang it in cheesecloth/ clean & thin cloth for an hour and then measure and use in the recipe.
  • Vegan - you can substitute regular yogurt with dairy-free alternatives like coconut milk yogurt or almond milk yogurt.

Variations

  • Instead of just strawberries, you can use mixed berries.
  • For a tropical frozen yogurt, you can try pineapple and mango combo.
  • Use fresh chopped strawberry for a texture difference.

Storage

You can freeze it for upto a month. Do not refreeze once thawed.

Top tip

Before serving, keep the frozen yogurt at room temperature to soften it. This way, it will be easier to scoop and serve.

Once thawed, you cannot freeze again as it will give you ice crystals. You can try making smoothie out of it.

More fruit = softer frozen yogurt. Less pulp and more juice fruits gives ice crystals.

Onion Raita or Vengaya Thayir Pachadi as we call in Tamil is a must sidedish for biryani.The combination of biryani with raita is like match made in heaven and I cannot imagine eating biryani without onion raita.There are many variations to this onion raita but this is the simple one amma usually makes and I am hooked on it too. The variations include onion tomato raita, onion cucumber raita, onion mint raita,cucumber onion tomato raita etc but the one I am sharing is a very simple onion raita which is the best sidedish for biryani.

Ingredients

  • 1 cup thick curd / yogurt
  • 1 medium sized big onion
  • 1 green chilli finely chopped
  • 1/2 tbsp coriander leaves chopped
  • salt to taste

Instructions

  • Peel off the skin of onion and cut the onion into half.

About Kashmiri Pulao

Kashmiri Pulao is one of the nicest rice meal that is savoured by the entire family. Cooking Kashmiri Pulao takes some time, but worth the efforts. This recipe does not need any veggie except for onions but one of the finest meals in vegetarian menu.

Though I am not a great fan of kashmiri pulao , I love it minus the fruits.I have tried kashmiri pulao twice before and both the times I reserved my share before adding fruits and had it heartily. Kashmiri Pulao is a very easy veg pulao which is aromatic and mildy sweet, flavoured with spices and saffron with the crunch of fruits, dry fruits and fried onions. The variation of making kashmiri pulao uses a different mix of fruits and dry fruits but in general for fruits : apple,pomegranate and pineapple is used.

Kashmiri Pulao Recipe – Ingredients

  • Saffron : Beware of fake saffron – Get them from Fab India, Nigliris or Dry Fruit Retailers.
  • Dry Fruits : Cashews, almonds and raisins are used in this recipe. Add walnuts, apricots & fig if you like its taste. Use whole sized cashews, almonds for garnishing.
  • Fruits : Cubed pineapple, pomegranate pearls are commonly used. You can add grapes, apple if you like them.
  • Spices : I have used cinnamon, cloves, cardamom, star anise, jeera powder for this recipe. Additionally you may use black cardamom, fennel, ginger powder, bay leaf.
  • Rice : Use only basmati rice and preferably do not pressure cook rice. Rinse 2-3 times to remove starch from the plain rice. Cook it bit grain separated so that it is not sticky or form lumps. I recommend cooking it as a one pot dish in a ceramic container or in a pan. You can use cooker too to cook rice but make sure it is grain separated.

Kashmiri Pulao

Ingredients

  • 1 cup basmati rice
  • ¼ cup milk
  • 1 and ¾ cups water
  • 10 strands saffron
  • 1 medium sized big onion chopped lengthwise
  • ¾ tsp roasted cumin powder
  • salt to taste

To temper:

  • 2 tbsp + 1 tbsp ghee
  • 1/2 tbsp oil
  • 3 1/4 inch piece sinnamon
  • 2 nos cloves
  • 1 no cardamom
  • 1 no star anise

Fruits & Dry Fruits & Nuts

  • 1/2 cup pineapple
  • 1/2 cup pomegranate
  • 20 nos cashews
  • 15 nos almonds
  • 2 tbsp raisins

Instructions

  • Soak rice for 15 mins. Then rinse well drain water and set aside.
  • Heat ghee in a pan add all the spices listed under to temper : cinnamon, star anise, cardamom and cloves. Fry for few seconds.
  • Then add drained rice give a quick mix.
  • Soak saffron in warm milk.
  • Add saffron milk to rice.
  • Measure and add milk, water.
  • Cook covered until rice is done. Rice should be cooked soft but not mushy, it should be grain separated.
  • Fluff the rice and transfer to wide a mixing bowl. Set aside to cool a bit.
  • Heat ghee + oil – add cashews and almonds, fry until golden. Transfer to a plate and set aside.
  • Add raisins let it bubble up fry until golden. Transfer to a plate and set aside.
  • Heat oil in a pan add thinly sliced onions.
  • Fry until golden brown as shown bwlow, transfer to a plate and set aside.
  • Assemble fruits only while serving. To the mixing bowl having cooked rice : Add fried onion, nuts, raisins, pomegranate, pineapple etc.
  • Add required salt and roasted cumin powder. Mix it well.
  • Kashmiri pulao ready to eat.

  • You can pressure cook rice in the same mentioned ratio of water and milk for 1 cup of rice for 3 whistles das shown in the video.
  • If you don’t want the spices to come while eating then discard them.
  • Don’t add the fruits while rice is hot it will leave out water.Add fruits just before serving.So if you are making for guests, get all your ingredients ready and while you are about to serve heat the rice give a quick stir and when its still warm all fried onions,dry fruits nuts and fresh fruits.
  • Don’t heat / reheat after fruits are added.
  • You can even deep fry onions to save time, I tawa toasted it and it took around 10-12 mins to get roasted well.
  • Reserve whole cashews  and use it for garnish and serving.

  • You can even add vegetables like peas and carrot but I prefer making it just with fruits as the traditional way.

Cook rice

1.Soak rice for 15 mins. Then rinse well, drain water and set aside.

2.Heat ghee in a pan add all the spices listed under to temper : cinnamon, star anise, cardamom and cloves. Fry for few seconds.

5.Soak saffron in warm milk.

6.Add saffron milk to rice.

7.Measure and add milk, water.

8.Cook covered until rice is done. Rice should be cooked soft but not mushy, it should be grain separated.

Assembling

14.Assemble fruits only while serving else it will become soggy. To the mixing bowl having cooked rice : Add fried onion, nuts, raisins, pomegranate, pineapple etc.
