Curd chutney recipe | Thayir chutney recipe

Curd chutney recipe with detailed step by step pictures and video. It is a quick sidedish to make in just few mins.

Curd chutney is a quick sidedish for idli,dosa,chapathi etc. It can be made with minimal ingredients but do not underestimate the taste, its so flavourful and tasty.

The first time I heard and saw this chutney was in a tv show long time back but had no clue of the measures. But vaguely remembered the ingredients so tried it first for dinner adjusting the measures to suit our taste buds. It was so tasty then after few trials shot the video and here I am with this recipe.

This chutney is a  bit spicy but curd balances it but you can reduce spice level a bit according to your preference.

About this recipe:

Curd mixture : To begin with : First mix all the spice powders along with required salt to curd, whisk well to form a lumpfree creamy mixture. Set aside.

Tempering : First heat oil, temper mustard, cumin seeds, let it crackle then add ginger garlic paste. Saute for a minute until browned then add onion saute until golden. Then add curd mixture.

Cook chutney : Cook the mixture for few mins until oil seperates. Cook covered for few mins, stir inbetween and cook. Finally curd chutney ready to be served with idli, dosa, chapathi etc.

Serving and Storage:

  • This curd chutney goes well with idli, dosa, chapathi etc.
  • It keeps well in room temperature for a day . However you need to store this in fridge to avoid sourness. Keeps well in fridge for 3 days. No freezing recommended.

Ingredients

To temper:

  • 2 tbsp oil
  • 1/2 tsp mustard seeds
  • 1/4 tsp cumin seeds

Instructions

  • To begin with first to curd, add red chilli powder.
  • Add coriander powder,garam masala powder and required salt.
  • Whisk well to form a smooth creamy mixture. Set aside.
  • To a kadai : heat oil, add mustard seeds let it crackle.
  • Then add cumin seeds let it crackle, now add ginger garlic paste.
  • Saute until golden.
  • Add chopped onion.
  • Fry until golden.
  • Then next add curd mixture together with onion.
  • Mix it well.
  • Boil in low flame first.
  • After that cook covered for few mins.
  • Open then give a quick stir. Curd chutney getting ready.
  • Again cook covered for 3-5 mins or until raw smell of spice powders leave.
  • Oil seperates like this.
  • Consistency should be slightly thick like this.
  • Switch off. The oil floating on top will give more shelf life.

Notes

  • Do not compromise on oil - may be you can neglect it while serving.
  • I added homemade red chilli powder and it was medium spicy.
    You can use red chilli powder or even kashmiri chilli powder.
  • I used groundnut oil. You can use refined oil or even gingelly oil.
  • You can taste check for the doneness. It takes just 10 mins in total after curd mixture is added.

How to make curd chutney recipe:

9. Then next add curd mixture together with onion.

My tips while making curd chutney recipe:

  • Do not compromise on oil – may be you can neglect it while serving.
  • I added homemade red chilli powder and it was medium spicy. You can use red chilli powder or even kashmiri chilli powder.

Kuchi chips recipe, Crispy cassava finger chips

Kuchi chips is made with tapioca also known as kappa or cassava in common. It is very addictive snack. Full video recipe.

As I have mentioned in my tapioca chips post, this is my most favorite snack in my hostel days. It will be so addictive that we can’t stop munching it. Though chips and this are made the same way, I some how feel this is super flavorful and more tasty. I don’t know why. Last month, while I was browsing found this video by chance.

I liked the technique a lot and wanted to try when ever I buy kuchi kizhangu. First tried with a small piece of the kizhangu and loved it. Though I could not get the same exact size like how I saw in the video, this was tasting exactly like the one I used to eat. If I had a good mandoline slicer like the one in the video, I can recreate the same.

Before you make the chips:

  • Make sure you have a good sharp mandoline slicer with thick opening. Thin ones will not work.
  • Your slices should be thick so that you get match stick like chips. If they are thin, it will curl up and also get browned fast.
  • ⚠ Always be careful while slicing. Use a mandoline slicer with a gripper to hold the kizhangu. Otherwise, there are high chances of slicing your finger or hand! ⚠

So I suggest beginners in kitchen to stay away from this and only for those who have experience handling the mandoline slicer carefully.

Why one should use mandoline slicer instead of knife?

Because it is easy and gives more consistent shape and size if the slicer is really good. Mine is broken at one side so I could not get even thickness. But the wooden one we get in India with adjustable iron blade is perfect for this.

How to choose Maravalli kizhangu/ kappa/kuchi kizhangu/ cassava/ Tapioca ?

Choose the one that is almost of even thickness for best results as it will give equal broad slices. It will be easy to stack it and then make into match sticks.

Also choose a tender one without any thick root/ fibre running in the middle as it might make it difficult to slice.

Crispy Kuchi chips

Kuchi chips is made with tapioca also known as kappa or cassava in common. It is very addictive snack. Full video recipe.

Ingredients

  • 1 Tapioca / cassava medium sized
  • 1/2 tsp Red chilli powder
  • Salt as needed
  • Oil to deep fry

Instructions

  • Wash and cut the kuchi kizhangu into equal length logs. Divide into two. Peel off the skin (brown+ pink layers) using a spatula.
  • Wash the kizhangu well to get rid of any dirt. Slice carefully in a sharp slicer into thick slices.
  • As you slice, stack the slices uniformly. Once you gather all slices from that piece,
  • Hold the slices perpendicular to the slicer and slice to get match sticks shaped tapioca.
  • Repeat to finish. Heat enough oil to deep fry in a kadai.
  • Add the tapioca match sticks in sprinkled way.
  • Once bubble reduce slightly and the bubble noise reduces, put the flame to low or medium.
  • Deep fry until the bubbles and sound stops completely. Take care not to let it too brown.
  • Repeat to finish. Once done, drain over paper towel.
  • Sprinkle salt and chilli powder to serve.

  • Always be careful while slicing.
  • Choose tapioca that are tender to avoid the fibre running along the middle which will make slicing difficult.
  • Don’t fry in too hot oil. While you drop in oil, let it be hot. After few seconds, cook in medium or low flame for crisp results.
  • Use a sharp mandoline slicer.
  • Save any un used sliced towards end, fry it all in a separate batch.
  • While it is hot itself, sprinkle required salt and red chilli powder. Toss well. It will coat evenly.

Generally hot chocolate can be made using white chocolate or dark chocolate. This coffee flavoured white chocolate drink is a delicious twist. I love any coffee flavoured drinks as I am addicted to coffee.

I have read about this white chocolate mocha served in starbucks but they use espresso and condensed milk. But this is a easy version with available ingredients in your pantry. But trust me in comparison this homemade white chocolate mocha is no lesser. This is a treat for coffee lovers.

You will need :

  • Coffee decotion – You can use filter decotion or make instant decotion as I have shown here.
  • White chocolate – Use good quality white chocolate. Use compound chocolate for best results.
  • Milk – Full fat milk is preferred tor making a richer version however you can use any milk.
  • Whipped cream – This is just for topping to make it look like in restaurants. You can skip it if you don’t have.

About this white chocolate mocha recipe :

This is a very easy to make go to recipe that I follow to make delicious white chocolate mocha. First make a thick decotion using hot water and instant coffee powder, set aside. Next boil milk, whisk then and there to avoid cream from collecting on top.Once milk is boiled add white chocolate shavings whisk well until melted. To a serving glass first add the decotion, then add hot chocolate milk to it. Finally garnish with some whipped cream and white chocolate shavings and serve immediately.

Serving:

Top it up with whipped cream or you can serve it as such too. Sprinkle little chocolate shavings and serve.

  • Whisk well to avoid cream forming, keep whisk on and off and boil.
  • After that add white chocolate to it.
  • After that, whisk well and let chocolate melt completely.
  • Switch off.
  • Finally serving time: Take your serving glass first add coffee decotion.
  • Then add milk to it.
  • Stir it well.
  • Pipe whipped cream over it, lastly sprinkle chocolate shavings and serve immediately.
